Ingredients
Brownies
- 170g butter
- 200g dark chocolate
- 160g plain flour
- 40g cocoa powder
- 3 eggs
- 200g caster sugar
- 60g light brown sugar
- 1tbsp vanilla extract
- 1/2 tsp salt
- 50g dark chocolate chunks
Nutella hazelnut filling
- 140g Nutella
- 50g chopped hazelnuts
Hazelnut glaze
- 50g chopped hazelnuts
- 6oz dark chocolate chips
- 4oz double/whipping cream
- 2tbsp golden/corn syrup or your choice of syrup
Instructions
Nutella hazelnut filling
- Chop the hazelnut into small pieces, mix together with the Nutella.
Brownies
- Melt the dark chocolate and butter in the microwave, 20 secs at a time. Set aside to cool for min 5 mins.
- Mix the eggs, sugar & vanilla extract with an electric beater/stand mixer for 4 mins until creamy.
- Fold in the slightly cooled chocolate butter mix with a spatula.
- Sift half the flour and cocoa together into the wet ingredients, fold in with spatula. Repeat with the remaining flour and cocoa.
- Fold in the dark chocolate chunks.
- Add half the brownie mixture into the a lined brownie tin.
- Add the Nutella and hazelnut mix on top, leave a little border around the edges.
- Spread the remaining brownie mixture on top.
- Bake at 170c fan for 25 -30 mins. (25mins will give you extra fudgy brownies more like a pudding)
- Set aside to cool.
Hazelnut ganache
- Heat the cream in the microwave for 1 minute, pour it over the chocolate chips.
- Let it sit for 5 minutes, then whisk together until combined.
- Add the chopped hazelnuts, stir until combined.
Assemble
- Once the brownies have cooled, spread the hazelnut ganache on top.
- Serve as is, or warm slightly in the microwave. Tastes perfect with a scoop of vanilla ice cream!
