This one is for all the Tiramisu, coffee lovers out there…and me. If I had two choose a dessert that represented me, this would no doubt be it.
WHAT DOES IT TASTE LIKE?
Well it tastes like if a Tiramisu and a cheesecake had a baby, a very luxurious baby.
Ok let break this dessert down shall we… let’s start at the bottom. This Tiramisu cheesecake has an easy Oreo cookie base, then a coffee cheesecake layer, a cake layer (cakes pieces dunked in coffee syrup), a Mascarpone cream cheese layer, topped with a chocolate ganache, whipped cream and to finish dusted in cocoa powder.
I know it sounds like a lot of work, but it’s really not that bad and tbh this one is more of a special occasion kinda dessert. So when you need to pull out all the stops this is the dessert to whip up.
ANY TIPS FOR MAKING THIS TIRAMISU CHEESECAKE?
- Do not make the cake layer, you a pre made vanilla sponge or madeleine’s. We want to save time where we can with this one.
- Make the following steps the day before, the rest just before serving – the Oreo base, coffee cheesecake layer, cakes layer and Mascarpone layer.
- Do not serve this cheesecake on a hot day, it is a no bake cheesecake after all.
WHEN SHOULD I MAKE THIS TIRAMISU CHEESECAKE EXTRAVAGANZA?
You can make this dessert for any special occasion, well probably not one that will be celebrated outside on a hot day…apart from that you’re good. This cheesecake would be demolished not only by Tiramisu and coffee lovers, but anyone who loves a creamy decadent dessert.
Ingredients
Oreo cookie base

- 1 1/2 packets Oreo cookies
- 1/4 cup melted butter

Coffee cheesecake layer
- 250g Mascarpone cheese
- 90g Cream cheese
- 1 Cup icing sugar
- 3 tbsp espresso coffee
- 1/2 cup double/heavy cream
- 1tbsp vanilla extract
Vanilla cheesecake layer
- 180g cream cheese
- 125g Mascarpone cheese
- 1/2 cup icing sugar
- 2 tbsp vanilla extract
- 1/2 cup double/heavy cream
Cake layer
- Any pre bought vanilla sponge cake, madeira loaf, madelines etc
- 3tbsp Kahlua
Chocolate ganache
- 1/2 cup double/heavy cream
- 1 cup dark chocolate
- 1tbsp golden syrup
Whipped cream topping
- 3/4 cup double.heavy cream
- 14 cup icing sugar
- 1 tbsp vanilla extract
Instructions
Tiramisu cheesecake
1.Crush the Oreo cookies in a zip lock bag including the filling. Pour into a bowl, add melted butter, mix until combined. Line the a 8" springform tin (bottom only, not the sides), push the Oreo's into the bottom. Set aside.
2. Mix all the ingredients together until combined excluding the double cream. Add 3 tbsp of hot water to the Espresso powder, mix until combined. Whip the double cream in a separate bowl, add the coffee mix in 3 stages until combined, do not overmix you want the cream to still be fluid but firmer.
3.Add the coffee cream to the mascarpone mix, use a spatula fold until combined. Pour on top of the Oreo cookie base. Pop in the fridge for 1.5 hours.
4.Crumble vanilla sponge into small pieces and douse with Kahlua in a bow l(you need enough cake to cover the coffee layer without any spaces)
4.Add all the vanilla layer ingredients into a bowl, mix using an electric beater until combined. Pour on top of the coffee layer, pop back in the fridge overnight.
5.When you are ready to serve, make the chocolate ganache, once cooled, drip down the sides of the cheesecake. Drizzle a little chocolate over the top, then layer large spoonfuls of the sweetened whip cream, dust with cocoa and enjoy!
