You have got to try these Mini Bourbon biscuits with a creamy Nutella filling. I have made a few changes to the original version including shrinking them down in size and filling them with Nutella. The result…almost too cute to eat biscuits!

What exactly is a bourbon biscuit?

Bourbon biscuits are a popular type of sandwich biscuit, originally from the United Kingdom. They consist of two rectangular chocolate-flavored biscuits with a sweet chocolate cream filling in the middle. The name “Bourbon” is derived from the French royal family, the House of Bourbon, but the biscuit itself has no direct connection to bourbon whiskey.

Bourbon biscuits were first introduced in 1910 by the British biscuit company Peek Freans and were initially called “Creola.” The name “Bourbon” was adopted later. So that settles it, there is no alcohol in Bourbon biscuits!!

They were a staple in many households and a classic choice for tea-time treats! they have a bit of a retro vibe about them which makes them even more fun to make.

What ingredients do I need to make these mini bourbon Nutella biscuits?

You will need the following ingredients:

  • Salted butter: Make sure it is room temperature, salted butter enhances the flavour of these biscuits
  • Caster/granulated sugar : Caster sugar is best as it is superfine, but if you can’t get this granulated is fine.
  • Salt: Enhanced the chocolate flavour and balances the sweetness.
  • Golden syrup: If you can’t find golden syrup use corn or honey.
  • Plain flour: Also called all purpose flour.
  • Cocoa powder: To add the chocolate flavour into these cookies.
  • Bicarbonate: Just a little to help with lightness, we don’t want the biscuits to rise too much.
  • Milk: To help loosen the biscuit dough a little.
  • Vanilla extract: Vanilla enhances the flavour of chocolate, I always add vanilla in my chocolate bakes.

Most of the ingredients you probably have already in your kitchen which means you can make them today!

How do you make these mini Bourbon biscuits?

  1. Cream the butter & sugar together, add golden syrup, vanilla extract, mix until combined.
  2. Sift the dry ingredients into the bowl, mix until the dough starts to come together, pour in the milk to loosen. Knead on a counter for 2 mins or until the dough has come together.
  3. Place baking paper on a tray, add baking paper on top, roll out the dough. 
  4. Mark the biscuits with a scraper or a knife, then dot with a fork. Bake @170c for 10mins. 
  5. Remove the biscuits from the oven, run a sharp thin knife down each marking to separate the biscuits, spread them out, pop back in the oven for 3 mins.
  6. Once cool, put 5tbsp Nutella in a piping or zip lock bag, pipe onto an upside down biscuit. Top with a Bourbon biscuit & enjoy!

Ingredients

  • 120g salted butter
  • 110g caster sugar
  • Pinch of salt
  • 2tbsp golden syrup
  • 240g plain flour
  • 50g cocoa powder
  • 1/2tsp bicarbonate 
  • 2-3tbsp milk
  • 1tbsp vanilla extract
  • Nutella for filling

Instructions

1.Cream the butter & sugar together, add golden syrup, vanilla extract, mix until combined.

2.Sift the dry ingredients into the bowl, mix until the dough starts to come together, pour in the milk to loosen. Knead on a counter for 2 mins or until the dough has come together.

3.Place baking paper on a tray, add baking paper on top, roll out the dough. 

4.Mark the biscuits with a scraper or a knife, then dot with a fork. Bake @170c for 10mins.
