Tips to make the perfect rolo brownies?

Here are some tips to make the perfect Rolo-shaped brownies:

  • Use good quality chocolate: The chocolate you use will affect the taste and texture of your brownies. I recommend using semi-sweet or dark chocolate (under 60% cocoa) for the best flavour.
  • Don’t overmix the batter: Overmixing the batter will result in tough and dry brownies. Mix just until everything is well combined, but don’t overdo it.
  • Don’t overbake the brownies: Overbaking the brownies will make them hard and dry. Bake them until a toothpick inserted in the center comes out with a few moist crumbs, but not wet batter.

Ingredients

Brownie cupcakes

  • 160g butter
  • 200g dark chocolate
  • 170g plain flour
  • 50g cocoa powder
  • 3 eggs
  • 200g caster sugar
  • 60g light brown sugar
  • 1tbsp vanilla extract
  • 1/4 tsp salt

Caramel filling

  • 6tbsp thick caramel/dulce de Leche (I used a pre made caramel)

Chocolate ganache

  • 200g dark chocolate
  • 110ml double/heavy cream

 

Instructions

  1. Melt the dark chocolate and butter in the microwave, 20 secs at a time. Set aside
  2. Mix the eggs, sugar & vanilla extract with an electric beater/stand mixer until creamy, then pour in the melted chocolate butter mix. Mix using a spatula until combined.
  3. Sift the flour, cocoa & salt into the wet ingredients mix until combined with a spatula.
  4. Pour the brownie mixture in 6 cupcake liners in a cupcake tin, bake for 25 mins at 170c. (If the centre of the cupcakes is too fudgy, bake for a further 5 mins)
  5. Once the brownie cupcakes have completely cooled, turn them upside down and cut a hole in the top.
  6. Pour in caramel then use a piece of the middle that you cut out to cover the hole.
  7. To make the chocolate ganache melt the dark chocolate in the microwave (20 seconds at a time) then stir in 110ml double/heavy cream. Mix together using a spatula.
  8. Using a spatula spread the cooled chocolate ganache over the brownie cupcake, smooth the sides and top to resemble a Rolo shape.
