S’more Brownie Pie

If you were to look up the word Indulgent in the dictionary…you would see this pie. So comforting and it has a secret marshmallow fluff layer in the middle…heck yeah!

WHY SHOULD I MAKE THIS S’MORES PIE?

There are sooo many reasons you should make this S’mores pie. It is a great dessert for a cosy night in or to serve to your friends at a party. This pie screams fun and is very easy to make. Also it tastes amazing, but be warned it is very indulgent, a little goes a long way.

LETS BREAK THIS S’MORES PIE DOWN

OREO COOKIE PIE CRUST

The pie crust is made with Oreo cookies which complements all the flavours in the pie. If you love Oreo brownies like me, then this is the pie for you.

Simply crush the Oreo cookies (don’t remove the cream filling) in a zip lock bag, then mix together with melted butter. It’s that simple. Smoosh into the pie tin and pop in the fridge until you’re ready to fill.

FUDGY BROWNIE

I used my go to fudgy brownie recipe for this S’mores pie and the quantity is just right. You should have a little left back which you will bake in a separate smaller tin to decorate the top of the pie.

MARSHMALLOW FILLING

Now for the easier part of the pie; the marshmallow fluff filling. Once you have poured some of the brownie mix into the Oreo pie crust gently spread a layer of marshmallow fluff on top. Cover with some more of the brownie mix (remember to leave some for the topping) then it’s time to move on to the topping.

CHOCOLATE GANACHE

I don’t know about you but I’m obsessed chocolate ganache. I’m mean just look at it…it’s so glossy and beautiful. To make the chocolate ganache heat the chocolate and cream together in the microwave in short bursts. Sweeten to taste with golden syrup or your syrup of choice. Once cool simply spread over the top and decorate the edges of the pie with brownies pieces and toasted marshmallows.

TO GOO OR NOT TO GOO

How gooey you want this pie to be is up to you. The longer you bake it the less fudgy it will be. For the level of fudgyness seen in the image below I would bake the pie for 30mins. For less fudgy pie you could experiment with longer baking times experiment with times between 35mins-40mins.

Ingredients

Oreo crust

  • 25 Oreos
  • 6tbsp butter

Chocolate brownie

  • 185g butter
  • 200g dark chocolate
  • 160g plain flour
  • 50g cocoa powder
  • 3 eggs
  • 200g caster sugar
  • 60g light brown sugar
  • 1tbsp vanilla extract
  • 1/2 tsp salt

Marshmallow Filling

  • 5 tbsp marshmallow fluff

Instructions

Oreo cookie pie crust

      1. Crush the Oreo cookies in a zip lock bag or food processor. Do not remove the cream filling. .
      2. Melt the butter then mix together with the Oreo cookies, push into a 8”pie tin. Refrigerate until you have made the brownie mix.

Brownie

        1. Melt 200g dark chocolate and butter in the microwave, 20 secs at a time.
        2. Mix the eggs, sugar & vanilla extract with an electric beater/stand mixer until creamy, pour in the melted chocolate butter mix. Mix until combined.
        3. Sieve the flour, cocoa & salt into the bowl, mix until combined. Fill the pie crust with the brownie mix until half full.
        4. Spread the Marshmallow fluff on top of the brownie layer, then cover with more of the brownie mix.There should be a little of the brownie mix left which you will bake in a separate smaller tin for 15-20mins.
        5. Bake the S'mores pie at 170c 30mins.

Chocolate Ganache

        1. Once the pie has cooled, make the chocolate ganache topping by heating the chocolate & cream in the microwave. Sweeten with 3tbsp golden syrup or your syrup of choice. Adjust to taste.
        2. Once cooled spread over the top of the pie, then top with brownie pieces & marshmallows. Toast the marshmallows wont a kitchen torch & enjoy.
