Blueberry Cheesecake Galette

I love a galette. They are the perfect when you need a dessert ASAP. My blueberry cheesecake galette can be whipped up in 10 mins (minus baking) and it is delicious.

WHAT DOES IT TASTE LIKE?

Like a blueberry cheesecake and a pie had a baby. Yup thats pretty accurate. The blueberries are sweet and juicy, the cheesecake is vanillary and creamy, and the shortcrust pastry seals the deal.

WHY SHOULD I MAKE THIS BLUEBERRY CHEESECAKE GALETTE?

It’s so quick and easy to make, and you don’t even have to make your own shortcrust pastry. I certainly don’t when I want a quick pastry dessert. I used pre made shortcrust pastry to make this galette and it was just as delicious.

Ingredients

Cheese cake filling

  • 300g cream cheese
  • 6tbsp icing sugar
  • 2tbsp lemon juice
  • 1.5tbsp vanilla extract

Blueberry topping

  • 1 cup blueberries
  • 1tbsp caster sugar
  • 1/2tbsp corn starch

Instructions

Blueberry Cheesecake Galette

        1. Mix cream cheese in a bowl with an electric beater/stand mixer  until smooth.
        2. Add the icing sugar, lemon juice & vanilla extract, mix until just combined.
        3. Roll out the short crust pastry into a circle, spread the cheese cake mix over the pastry. Leave a 2” edge without cream cheese which you will fold over to make the galette.
        4. Brush the crust with egg wash & bake @170c for 30mins.
        5. Serve warm with ice cream.
