  4. Fold 3/4 of the chocolate chips and chocolate chunks. (keep some to place on top of the cookie bar)

Ingredients

Chocolate chip cookie bars

  • 170g / 3/4 cup butter
  • 150g / 3/4 cup packer light brown soft sugar
  • 100g / 1/2 cup caster sugar
  • 1 egg
  • 1 egg yolk
  • 1tsp vanilla extract
  • 240g/ 2 cups sifted plain flour
  • 1/4tsp bicarbonate of soda
  • 1/2tsp salt
  • 100g milk or dark chocolate chips
  • 150g / 1 cup dark chocolate chunks

Caramel filling

  • 250g soft caramels
  • 60ml / 1/4 cup double cream
  • 1/4tsp salt

Instructions

Caramel sauce

  1. Melt the soft caramels and cream together in a sauce pan on a low- medium heat. Add the salt, keep stirring until the you have a caramel sauce. Set aside whilst you make the cookie dough.

Cookie dough

  1. Cream the room temperature butter , caster and light brown soft sugar together for 4 mins.
  2. Add the vanilla, egg and egg yolk, mix to combine.
  3. Add the sifted plain flour, bicarbonate of soda and salt. Mix together using a spatula.
  4. Fold 3/4 of the chocolate chips and chocolate chunks. (keep some to place on top of the cookie bar)

Assemble

  1. Line a 20cm x 20cm brownie tin.
  2. Push half the cookie dough mix into the bottom of the brownie tin.
  3. If the caramel sauce has hardened, warm it slightly until it is a but runny.
  4. Pour in the caramel sauce, avoiding the edges.
  5. Place the remaining cookie dough in small pieces on top of the caramel.
  6. Once the caramel is covered (don't worry if there are a few gaps) sprinkle the dark chocolate chunks and chocolate chips on top.
  7. Bake in the oven for 25 mins at 170c fan.
  8. Wait for the caramel chocolate chip cookie bars to cool before cutting into them.
