Fudgy Oreo Caramel Brownies

I don’t know about you but I am a salted caramel fanatic! So of course these Oreo salted caramel brownies are my absolute favourite.

Making homemade caramel sauce can be quite a challenge, so I’m sharing my fail proof recipe using Werthers originals. Your welcome.

WHAT DO THESE BROWNIES TASTE LIKE?

The brownies are fudgy, rich and chocolatey and taste amazing with the gooey salted caramel filling. The vanillery cream from the Oreo cookies take this flavour combo to the next level.

HOW DO I MAKE YOUR FOOL PROOF SALTED CARAMEL SAUCE?

Homemade caramel comes with its challenges, getting the consistency right is not a simple task.

To make my fool proof salted caramel sauce, all you need are 3 ingredients-weathers originals soft caramels, double cream and salt. Simply melt the Werthers originals on a low heat, add the cream, salt and mix until combined…thats it my friend.

Below I share my brownie making tips so you can whip up the best brownies at home for your family and friends. Or for yourself, you totally deserve it!

BROWNIE MAKING TIPS

  • Use good quality chocolate, it really does make a difference. I personally use a dark chocolate that’s 56% cocoa solids. Don’t go higher than 60%, your brownies would be too bitter.
  • Use butter over margarine for a richer flavour.
  • Do not over bake your brownies, check them 5 mins before the total baking time.
  • When you do check you brownies use a wooden skewer, the metal ones can come out clean when in fact the brownies are not done. (The mixture sticks to the wooden skewers better)
  • Don’t forget to line your brownie tin so you can easily lift them out once they have cooled.
  • If you under bake your brownies (which can easily happen with fudgy brownies, they are deceptive little things) pop them in the fridge before serving which will firm them up a bit. Otherwise serve them warm like a pudding with ice cream.

How to make these Oreo caramel brownies?

  1. Melt 200g dark chocolate and 170g butter in the microwave, 20 secs at a time. Set aside.
  2. Mix 3 eggs, 200g caster sugar, 60g light brown sugar & 1tbsp vanilla extract with an electric beater/stand mixer until creamy, fold in the cooled chocolate butter mix with a spatula.
  3. Sieve 160g plain flour and  50g cocoa powder together, add to the egg mix, fold in with spatula.
  4. Line a 20cmx 20cm baking pan with baking paper,  pour in half the the brownie mix.
  5. Pour in the salted caramel sauce leaving  1″ around the sides to stop it from spreading too much whilst baking.
  6. Pour the remaining brownie mixture on top of the salted caramel layer. Place broken Oreo cookies nd chocolate chunks on top  and bake @170c 30 mins.

Ingredients

Brownie

  • 170g butter
  • 200g dark chocolate
  • 160g plain flour
  • 50g cocoa powder

  • 250g Werthers Originals soft caramels
  • 1/4 cup double cream
  • 1/4tbsp salt

Toppings

  • 5-6 Oreo cookies
  • 50g Chocolate chunks

        1. Melt the Weathers Origional's on a low heat until melted.
        2. Add 1/4tsp salt and 1/4 cup double cream. Mix until combined then remove from the heat.
