Brookies – Fudgy and easy recipe

If you love brownies and cookies…you need to make my super fudgy brookies. They are easy to make and you get two desserts in one!

So what are Brookies? Well they are a mix between brownies and cookies and they taste amazing. I don’t know who decided to put cookie dough in brownies but they are a genius and should get an award…

What I love about this recipe is how easy they are to make. Even though you have to make two recipes the cookie dough tastes less than 5 mins to whip up so I promise it’s a very fast process. The brownie recipe is super fudgy and tastes amazing warm with a scoop of vanilla ice cream on top…yum!

Why should I make these brookies?

There are so many reasons why you should run to the kitchen and make these brookies. Here’s a list of some of them below:

  1. If you like brownies and cookies, why not get the best of both worlds. Two desserts in one!
  2. You love brownies but want to try something new, this is your sign to upgrade your brownies.
  3. They are the perfect cosy Friday night desserts. Serve warm with vanilla ice cream and snuggle up on the sofa.
  4. They are easy to make and perfect when you do not have a lot of time to make a dessert.

  1. When you do not have the energy to make a complicated dessert.
  2. When your brownie obsessed friends are coming around and you want to treat them.
  3. Date night, movie night snuggles basically they are perfect for any cosy night on the sofa.

Tips for making the perfect fudgy brookies?

  1. Make the cookie dough first, then make the brownie batter. The reason for this is if your let the brownie batter sit for a long period of time it changes from rich, smooth and fudgy to thick and not a pleasant consistency. So only mix it up when you are ready to pour it on top of the dough balls in the brownie tin.
  2. Make sure you let the melted chocolate and butter cool before adding it to the brownie mix. If it is too hot it can make the brownie batter split.
  3. Make sure you do not over bake the brookies. If you want them to be super fudgy bake them for 25 mins. Otherwise 30 mins will still be fudgy but not superrrrr fudgy…
  4. Let them cool before cutting them, you can always warm a slice up in the microwave for 10-15 seconds.

How do I make these fudgy brookies?

You make these brookies in easy parts, the cookie dough and the brownie batter.

  • To make the Cookie dough:
  • Cream together the room temperature butter and light brown sugar for 4 mins.
  • Add the egg yolk and vanilla extract, mix together until combined.
  • Add the sifted plain flour and salt, mix together using a spatula until the cookie dough forms.
  • To make the brownie batter:
  • Line a brownie tin with parchment paper.
  • Chop 200g  of dark chocolate into chunks. Save 100g to add to the brownie batter.
  • Melt the 200g of the chopped dark chocolate and butter in the microwave, 20 secs at a time. Set aside to cool.
  • Mix the eggs, sugar & vanilla extract with an electric beater/stand mixer for 4 mins until creamy, fold in the cooled chocolate butter mix with a spatula.
  • Sieve the flour and cocoa together, add to the egg mix, fold in with spatula.
  • Fold 100g chopped dark chocolate and 50g of milk or dark chocolate chips in the brownie batter. Set aside.

Ingredients

Brownie

  • 170g butter
  • 300g dark chocolate (only use dark chocolate for the brownie batter)
  • 50g dark or milk chocolate chips
  • 160g plain flour
  • 50g cocoa powder
  • 3 eggs
  • 200g caster sugar
  • 60g light brown sugar
  • 1tbsp vanilla extract
  • 1/4tsp salt

Cookie dough

  • 80g butter
  • 100g soft light brown sugar
  • 1 egg yolk
  • 1tbsp vanilla extract
  • 100g plain flour
  • 1/4 tsp salt
  • 50g dark or milk chocolate chips

Instructions

Cookie dough

  1. Cream together the room temperature butter and light brown sugar for 4 mins.
  2. Add the egg yolk and vanilla extract, mix together until combined.
  3. Add the sifted plain flour and salt, mix together using a spatula until the cookie dough forms.
  4. Stir in the chocolate chips. Cover the bowl with cling film, set aside.

Chocolate Brownies

  1. Line a 20cm x 20cm brownie tin with parchment paper.
  2. Chop 200g  of dark chocolate into chunks. Save 100g to add to the brownie batter.
  3. Melt the 200g of the chopped dark chocolate and butter in the microwave, 20 secs at a time. Set aside to cool.
  4. Mix the eggs, sugar & vanilla extract with an electric beater/stand mixer for 4 mins until creamy, fold in the cooled chocolate butter mix with a spatula.
  5. Sieve the flour and cocoa together, add to the egg mix, fold in with spatula.
  6. Fold 100g chopped dark chocolate and 50g of milk or dark chocolate chips in the brownie batter. Set aside.

Assemble

  1. Roll small balls of cookie dough and place them all over the booth of the brownie tin. You can make as many as you like depending on the ratio of brownie and cookie you want.
  2. Spread the brownie batter on top.
  3. Place flattened pieces of cookie top and place them on top of the brownie leaving gaps in between.
  4. Bake in the oven at 170c for 25mins- 30mins (25mins they will be very fudgy)
