How do I make this red velvet cheesecake brownie pie?

To make the red velvet brownie:

  1. Melt the butter in the microwave, 20 seconds at a time.
  2. Add the melted butter, sugar and cocoa powder in a mixing bowl. Mix together until combined with an electric beater.
  3. Mix the extra red gel food colouring with the vanilla extract in a separate bowl.
  4. Add the red food colouring and vanilla extract, eggs in the mixing bowl. Mix together until combined with the electric beaters.
  5. Fold in the sifted flour and salt using a spatula.
  6.  Add the white vinegar, fold gently using a spatula. Do not over mix.

Ingredients

Red velvet brownie pie

  • 230g unsalted butter
  • 320g caster sugar
  • 3tbsp cocoa powder
  • 2 eggs
  • 1tbsp vanilla extract
  • 1tsp extra red gel food colouring
  • 200g plain flour
  • 1/4tsp salt
  • 2tbsp white vinegar

Cheesecake layer

  • 226g cream cheese (full fat)
  • 50g caster sugar
  • 1 small egg
  • 1tbsp vanilla extract

Instructions

Red velvet brownie pie

  1. Melt the butter in the microwave, 20 seconds at a time.
  2. Add the melted butter, sugar and cocoa powder in a mixing bowl. Mix together until combined with an electric beater.
  3. Mix the extra red gel food colouring with the vanilla extract in a separate bowl.
  4. Add the red food colouring and vanilla extract, eggs in the mixing bowl. Mix together until combined with the electric beaters.
  5. Fold in the sifted flour and salt using a spatula.
  6.  Add the white vinegar, fold gently using a spatula. Do not over mix.

Cheesecake filling

  1. Add the egg in a small bowl, whisk the egg using a fork just until the yolk and white is combined.
  2. Add the cream cheese, sugar, vanilla extract in a mixing small mixing bowl.
  3. Add 3/4 of the egg, mix all the ingredients together using a spatula.
  4. If the mixture is quite soft do not add the remaining egg. If it is still stiff add the remaining egg. The goal is to make sure the cheesecake mixture is not runny.

Assemble

  1. Add half the red velvet brownie batter into a 23cm/9" pie dish.
  2. Add the cheesecake mixture, leave a gap around the edges.
  3. Add the remaining red velvet brownie batter on top.
  4. Smooth the red velvet brownie batter using a spatula until flat.
  5. Bake in the oven at 180c fan for 25 mins. If the pie is burning a bit on top cover the pie loosely with foil.
  6. Check the consistency of the pie at 30 mins, if it is still very liquid inside continue to bake for another 5 mins.
  7. When you stick a wooden skewer in the one it should come out a little wet and fudgy. If it is still liquid continue to bake for another 5 mins. The pie should be done within 40mins.
