These Mini S’mores Brownie Bites are everything you love about classic s’mores in one irresistible bite. Each one starts with a buttery digestive biscuit base, topped with a rich, fudgy brownie, toasted marshmallow and a piece of chocolate on top. They’re the perfect bite-sized dessert for summer parties, BBQs or whenever you’re craving a gooey chocolate treat—no campfire required!

Ingredients
Biscuit Base
- 110g digestive biscuits
- 80g unsalted butter, melted
Brownie Filling
- 70g unsalted butter
- 60g dark chocolate (70% cocoa), chopped
- 75g plain flour
- 10g cocoa powder
- 100g caster sugar
- 25g soft light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- Pinch of salt
Topping
- 12 marshmallows (i cut mine in half to make 24)
- 24 pieces of milk chocolate (such as Cadbury Dairy Milk or Hershey's)
Instructions
- Preheat the oven to 170°C fan / 190°C conventional. Lightly grease a 24-hole mini muffin tin.
- Add the digestive biscuits to a food processor and blitz into fine crumbs. Stir in the melted butter until evenly combined. Divide the mixture between the muffin holes (about 1 teaspoon each) and press down firmly using a small spoon or end of a rolling pin.
- Melt the butter and dark chocolate together until smooth and combined.
- In a separate bowl, whisk together the caster sugar, light brown sugar, egg and vanilla for 3 minutes.
- Pour in the melted chocolate mixture , fold using a spatula until smooth.
- Sift in the flour, cocoa powder and salt until no dry streaks remain. Do not overmix.
- Divide the brownie batter evenly between the muffin holes.
- Bake for 8-9 minutes, Leave for 5 minutes before removing from the tin. Place them on a cooling rack to cool.
- Place a marshmallow on top of each brownie bite and grill for 30–60 seconds, watching carefully, until golden and toasted.
- Immediately press a piece of chocolate into the centre of each toasted marshmallow and leave for a minute to soften before serving.
Note: Serve with a melted chocolate dip makes these Mini S'mores Brownie Bites so much fun and even more delicious.
