Looking for a fun and spooky Halloween brownie recipe? These Halloween Brownies with Oreo Skulls are rich, fudgy, stuffed with gooey Nutella and topped with a creepy collection of mini edible skulls!
Inspired by the famous Paris Catacombs, these brownies might look complicated, but the skulls are surprisingly easy to make. All you need are two ingredients — Oreo cookies and double cream! Mix them together to create a soft cookie dough, press it into mini skull moulds and you’ve got yourself the perfect spooky brownie topping.
They’re a fun Halloween baking project and make a seriously impressive centrepiece for your Halloween party dessert table. Almost too spooky to eat… almost!

Ingredients
Brownie Layer
- 160g unsalted butter
- 140g dark chocolate (70% cocoa)
- 170g plain (all-purpose) flour
- 20g cocoa powder
- 230g caster sugar
- 60g soft light brown sugar
- 3 medium eggs
- 1 tbsp vanilla extract
- 1/4 tsp salt
- 8-9 large tbsp Nutella
Chocolate ganache layer
- 130g dark chocolate
- 130g double cream
- 1-2tbsp golden syrup (or syrup of choice)
Oreo skulls
- 2 × 154g packets Oreo cookies (308g total)
- 60ml double cream
Instructions
Brownie layer
- Melt butter and dark chocolate in microwave in 20-second bursts, stirring between, until smooth. Set aside to cool slightly.
- Beat eggs, caster sugar, light brown sugar, and vanilla extract for 3 minutes until creamy.
- Fold in melted chocolate and butter mixture.
- Sift half the flour, cocoa powder, and salt into the wet ingredients and fold in gently. Repeat with remaining dry ingredients until just combined.
- Pour half into a lined 8"x8" square tin.
- Spoon the Nutella on top.
- Sprewad the remaining brownie mix on top.
- Bake for 26 minutes at 170c fan.
Chocolate ganache layer
- Once the brownies have cooled completely, make the chocolate ganache.
- Chop the dark chocolate into very small pieces and put into a bowl.
- Heat the cream on its own in the microwave for 1 minute. Once hot, pour over the chocolate.
- Let it sit for 1 min, then stir to combine.
- Stir in the golden syrup.
- Let the ganache cool until it becomes a thicker spreadable consistency.
- Spread the ganache on top of the brownies.
Oreo Skulls
- Crush the Oreos: Add the Oreo cookies, including the cream filling, to a food processor and blitz until they resemble fine crumbs.
- Make the dough: Pour in the double cream and pulse until the mixture comes together to form a soft, mouldable cookie dough.
- Fill the moulds: Take small portions of the Oreo dough and press firmly into the cavities of a mini silicone skull mould, making sure to fill all the details.
- Remove the skulls: Carefully pop the Oreo skulls out of the silicone moulds, place in baking paper until set.
- Decorate: Arrange the skulls on top of the brownies to create a spooky catacomb-inspired Halloween dessert!
- Optional: drizzle melted chocolate on top!
