Ingredients
Chocolate banana bread
- 280g very ripe bananas (peeled weight), mashed (2.5-3 bananas)
- 120g unsalted butter, softened
- 150g light brown sugar
- 2 medium eggs
- 1 tsp vanilla extract
- 120g sour cream
- 190g plain flour
- 40g cocoa powder
- ½ tsp baking powder
- ½ tsp bicarbonate of soda
- ¼ tsp salt
- 120g milk chocolate chunks
Nutella topping
- 3-4 heaped tbsp Nutella (or chocolate spread of your choice)
Instructions
- Preheat the oven to 170°C fan. Grease and line an 8-inch loaf tin with baking paper.
- Beat the softened butter and light brown sugar together for 2–3 minutes until lighter and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- Add the mashed bananas and sour cream and mix until combined. The mixture may look slightly curdled at this stage – this is completely normal.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, bicarbonate of soda and salt.
- Fold the dry ingredients into the wet mixture until only just combined.
- Fold through the milk chocolate chunks.
- Spoon the batter into the prepared loaf tin and level the top.
- Bake for 55 minutes, or until the centre is just cooked through and a skewer inserted into the middle comes out with a few moist crumbs (melted chocolate is fine). If the top is browning too quickly, loosely cover with foil for the final 15–20 minutes.
- Leave the loaf to cool in the tin for 15 minutes before transferring to a wire rack to cool completely.
- Once cool spread the Nutella on top.
