No Bake Snickers Cheesecake (Gooey Peanut Caramel & Oreo Crust)

If you love Snickers bars, this no-bake Snickers peanut butter cheesecake is the ultimate dessert. It combines all the flavours that make the classic chocolate bar so addictive – creamy peanut butter, caramel, chocolate, roasted peanuts and a hint of salt – but transforms them into a rich and indulgent cheesecake.

The cheesecake starts with a crunchy Oreo cookie crust, followed by a smooth and creamy peanut butter cheesecake filling. It’s finished with a layer of salted peanut caramel, chocolate drizzle, chopped Snickers pieces and roasted peanuts for the perfect mix of creamy, gooey and crunchy textures.

Best of all, there’s no oven required, making it an easy show-stopping dessert that can be prepared ahead of time.

Ingredients

Oreo crust

  • 616g Oreo cookies (4 packets)
  • 200-250g unsalted butter, melted

Peanut butter cheesecake filling

  • 600g full-fat cream cheese, room temperature
  • 150g smooth peanut butter
  • 120g icing sugar
  • 1 tbsp vanilla extract
  • 300ml double cream, cold

Salted peanut caramel topping

  • 250g caramel sauce (you can buy it ready made)
  • 100g roasted salted peanuts

Instructions

Make the Oreo crust

  1. Line the base of an 8-inch x 3-inch round springform cake tin with baking paper.
  2. Crush the Oreo cookies into fine crumbs using a food processor.
  3. Add the melted butter and mix until the crumbs are evenly coated.
  4. Press the mixture firmly into the base and sides of the tin.
  5. Chill in the fridge while you prepare the filling.

Make the peanut butter cheesecake filling

  1. Beat the cream cheese until smooth and creamy.
  2. Add the peanut butter, icing sugar and vanilla extract. Mix until fully combined and smooth.
  3. In a separate bowl, whip the double cream until soft-medium peaks form.
  4. Fold the whipped cream into the peanut butter cheesecake mixture in stages until smooth and creamy.
  5. Spoon the filling over the Oreo crust and smooth the top.
  6. Refrigerate for at least 8 hours, preferably overnight, until fully set.

Add the peanut caramel topping

  1. Mix the caramel sauce with the salted peanuts.
  2. Pour over the chilled cheesecake.
  3. Optional -Serve with a drizzle of melted chocolate.
