Tip for making a moist chocolate cake – blooming the cocoa powder

Did you know that there’s a simple trick that can make your cocoa powder even more delicious and intense? It’s called blooming, and it’s super easy to do.

Blooming cocoa powder means mixing it with a hot liquid, such as water, coffee, or milk, and letting it sit for a few minutes. This process hydrates the cocoa solids and releases more of their flavor and aroma. It also dissolves some of the bitterness and acidity that can make cocoa powder taste flat or dull.

Blooming cocoa powder can make a huge difference in your baked goods and beverages. It can make them richer, darker, and more chocolatey. It can also improve the texture and moistness of your cakes.

  • 280g caster sugar
  • 3 eggs
  • 160g self raising flour
  • 60g cocoa powder
  • 150ml boiling water
  • 2 jars of 350g Nutella or your chocolate spread of choice. (You should only need approximately one and half jars of Nutella for the entire cake)

Instructions

Easy Six Ingredient Chocolate Cake

  1. Boil the kettle.
  2. Cream room temperature butter and sugar together. It will not become creamy, don't worry you are doing it right.
  3. Add one egg at a time, mix using electric beaters.
  4. Fold in half the sifted flour using a spatula, then fold in the remaining flour.
  5. Mix together the cocoa powder and boiling water in a separate bowl. Let it sit for 2 mins.
  6. Pour the cocoa mixture into the cake batter. Fold using the spatula until combined.
  7. Line two 6" cake tins, pour in the cake batter.
  8. Bake in the oven for 25-28 mins at 180c fan.

Assemble and decorate

  1. Once the cakes have cooled, cut off the tops to make them flat.
  2. Optional simple syrup the cake layers to make them more moist.
  3. Spread a layer of Nutella on top of the 1st cake layer.
  4. Turn the second cake layer upside down and place it on top.
  5. Spread Nutella all over the cake in a messy pattern. I recommend stirring the Nutella in a bowl to loosen it before spreading it on the cake. I used 1 and a half jars of Nutella in total for the inside and outside of the cake. You will not need the whole 2 jars.
