Easy Chocolate Fudge Cake – Extra fudgy

Everyone should have an easy chocolate fudge cake recipe. Well my friends this is it! It’s extra fudgy, rich and chocolatey. This is the cake I make when I have a serious chocolate cake craven that won’t go away.

So how do you make an extra fudgy chocolate cake? Well it’s not just the ingredients that makes a difference, it’s also the method.

I love this cake because it’s really easy to decorate, you definitely do not have to be great at cake decorating. The chocolate buttercream is smothered all over the cake is a messy design which means you do not have to have advanced cake icing skills. The chocolate ganache drip is easy too, my view is the messier the better.

Tips for making the perfect chocolate fudge cake?

  • Use good quality chocolate. The chocolate is the star of this cake, so don’t skimp on it. Use dark chocolate around 60% cocoa solids for the best flavour and texture.
  • Don’t overmix the batter. Just stir until everything is combined, then pour it into the pan. Overmixing will make the cake tough and dry.
  • Don’t overbake the cake. The cake is done when a toothpick inserted in the center comes still fudgy. The cake will continue to cook as it cools, so don’t worry if it looks underdone.

  • This cake is easy to make and does not require any advanced cake decorating skills.
  • It’s extra fudgy and moist. No dry cake here!

How do I make this chocolate fudge cake?

  1. Melt the butter and the chocolate together in the microwave.
  2. Add the vegetable oil, caster sugar, soft light brown sugar and vanilla extract. Mix together until all the ingredients are combined.
  3. Add the eggs, one at a time, mix until combined.
  4. In a separate bowl add the flour, cocoa, salt and baking powder. Sift the in the wet ingredients.
  5. Pour 1/3 of the boiling water over the cake batter, stir using a spatula until just combined. Repeat until all the boiling water has been mixed into the batter. (do not over mix)
  6. Pour the cake batter into three lined 6″  cake tins. Bake for 30-35 mins at 170c. The cakes should still be fudgy inside when you remove them from the oven.

Ingredients

  • Chocolate fudge cake
  • 190g dark chocolate (50%-60% cocoa)
  • 100ml vegetable oil
  • 150g unsalted butter
  • 200g caster sugar
  • 100g soft light brown sugar
  • 3 eggs
  • 35g cocoa powder
  • 220g plain flour
  • 1/2tsp salt
  • 1.5tsp baking powder
  • 1tbsp vanilla extract
  • 340ml boiling water

Chocolate buttercream

  • 300g salted butter
  • 550g icing sugar
  • 1-4tbsp milk (as needed)
  • 170g dark chocolate (50%-60% cocoa)

Chocolate ganache drip

  • 180ml dark chocolate or chocolate chips
  • 230ml heavy cream
  • 4tbsp golden syrup

 

Instructions

  1. Melt the butter and the chocolate together in the microwave.
  2. Add the vegetable oil, caster sugar, soft light brown sugar and vanilla extract. Mix together until all the ingredients are combined.
  3. Add the eggs, one at a time, mix until combined.

Chocolate buttercream

  1. Melt the dark chocolate in the microwave 20 seconds at a time. set a side to cool slightly.
  2. Whisk together using electric beaters the room temperature butter and icing sugar until fluffy.
  3. Fold the cooled melted chocolate with a spatula.
  4. Cover the bowl with cling film until ready to use.

Chocolate ganache drip

  1. Chop the dark chocolate into small pieces,.
  2. Heat the cream on its own in the microwave for 1 minute. Once hot and bubbling, pour over the chocolate.
  3. Let it sit for 1min, then stir to combine.
  4. Stir in the golden syrup, set aside to cool.

Assemble

  1. Start by making the cake, set them aside to cool.
  2. Once the cake has almost cooled, make the chocolate fudge icing, set aside covered with cling film.
  3. Make the chocolate ganache drip, set aside to cool.
  4. Cut the tops off the three cakes to make them flat, stack the cakes with the chocolate fudge icing.
  5. Ice the cake with the remaining chocolate buttercream icing. Use a spatula to create messy swirls all over the cake.
  6. Place the cake in the fridge for 30-40mins.
  7. Warm the chocolate ganache drip in the microwave for 10 seconds. Drizzle the chocolate ganache on top of the cake, push it over the sides with a spoon. If it is too thick, heat it in the microwave for another 10 seconds, or until it's runny but not hot.
