Ingredients
Tacos
- Pack of Tortilla wraps
- 2tbsp butter
- 6 Biscoff biscuits
Apple pie topping
- 2 apples
- 2tbsp dark brown sugar
- 1tsp pumpkin spice or cinnamon
- 1tbsp cornstarch
- 3tbsp water
Cheesecake filling
- Cream cheese 280g
- 3tbsp caster sugar
- 1tbsp vanilla extract
Biscoff drizzle
- 3tbsp Biscoff spread
This recipe makes 6-8 tacos.
Instructions
Tacos
- Cut 3.5" diameter circles using a cookie cutter in a tortilla wrap.
- Brush one side of each tortilla circle with melted butter, then coat in Biscoff crumbs.(use a food proseccor to blitz the Biscoff biscuits into fine crumbs)
- Fold the tortillas in half then place in between the gaps in an upside down cupcake tin.
- Bake for 7 mins at 160c.
Apple pie topping
- Peel and chop the apples in small cubes.
- Add 1tbsp of butter in a frying pan, fry the apples until they just start to get soft.
- Mix together the water and cornstarch, pour over the apples and add the brown sugar.
- Add the pumpkin spice or cinnamon, continue to cook on low to medium heat until the apples look saucy and sticky.
Cheesecake filling
- Add the cream cheese, sugar and vanilla extract in a mixing bowl. Mix together using an electric beater until combined.
- Add the cheesecake filling in a piping bag. Place in the fridge until ready to assemble the tacos.
Assemble the tacos
- Pipe the cheesecake filling in the centre of each taco.
- Top with a spoonful of the apple pie topping.
- Heat the Biscoff spread, drizzle on top of the tacos.
This recipe makes 6-8 tacos.
