Ingredients

Brownies

  • 170g butter
  • 200g dark chocolate
  • 160g plain flour
  • 40g cocoa powder
  • 3 eggs
  • 200g caster sugar
  • 60g light brown sugar
  • 1tbsp vanilla extract
  • 1/2 tsp salt
  • 50g dark chocolate chunks

Nutella hazelnut filling

  • 140g Nutella
  • 50g chopped hazelnuts

Hazelnut glaze

  • 50g chopped hazelnuts
  • 6oz dark chocolate chips
  • 4oz double/whipping cream
  • 2tbsp golden/corn syrup or your choice of syrup

Instructions

 

Nutella hazelnut filling

  1. Chop the hazelnut into small pieces, mix together with the Nutella.

Brownies

  1. Melt the dark chocolate and butter in the microwave, 20 secs at a time. Set aside to cool for min 5 mins.
  2. Mix the eggs, sugar & vanilla extract with an electric beater/stand mixer for 4 mins until creamy.
  3. Fold in the slightly cooled chocolate butter mix with a spatula.
  4. Sift half the flour and cocoa together into the wet ingredients, fold in with spatula. Repeat with the remaining flour and cocoa.
  5. Fold in the dark chocolate chunks.
  6. Add half the brownie mixture into the a lined brownie tin.
  7. Add the Nutella and hazelnut mix on top, leave a little border around the edges.
  8. Spread the remaining brownie mixture on top.
  9. Bake at 170c fan for 25 -30 mins. (25mins will give you extra fudgy brownies more like a pudding)
  10. Set aside to cool.

Hazelnut ganache

  1. Heat the cream in the microwave for 1 minute, pour it over the chocolate chips.
  2. Let it sit for 5 minutes, then whisk together until combined.
  3. Add the chopped hazelnuts, stir until combined.

Assemble

  1. Once the brownies have cooled, spread the hazelnut ganache on top.
  2. Serve as is, or warm slightly in the microwave. Tastes perfect with a scoop of vanilla ice cream!
