These fudgy cheesecake brownies are two desserts in one…my kinda dessert! They are super easy to make which I love and are devoured in minutes.
WHAT DO THESE CHEESECAKE BROWNIES TASTE LIKE?
The brownies are very chocolatey in flavour as they are made with cocoa and dark chocolate. Not too sweet and are taken to another level by the creamy cheesecake filling. They are very rich and indulgent and are quite moreish.
The cheesecake layer is an amazing edition to these already delicious brownies. It’s so easy to make, you just mix all the. ingredients together! That’s it!
The cross section of these brownies looks so impressive, they are a great treat to make for guests or a comforting weekend dessert. Then again do we really need a reason to make brownies…um I think not!
BROWNIE MAKING TIPS
- Use good quality chocolate, it really does make a difference. I personally use a dark chocolate that’s 56% cocoa solids. Don’t go higher than 60%, your brownies would be too bitter.
- Use butter over margarine for a richer flavour.
- Do not over bake your brownies, check them 5 mins before the total baking time.
- When you do check you brownies use a wooden skewer, the metal ones can come out clean when in fact the brownies are not done. (The mixture sticks to the wooden skewers better)
- Don’t forget to line your brownie tin so you can easily lift them out once they have cooled.
- If you under bake your brownies (which can easily happen with fudgy brownies, they are deceptive little things) pop them in the fridge before serving which will firm them up a bit. Otherwise serve them warm like a pudding with ice cream.

Ingredients
Brownie
- 190g butter
- 200g dark chocolate
- 160g plain flour
- 50g cocoa powder
- 3 eggs
- 200g caster sugar
- 60g light brown sugar
- 1tbsp vanilla extract
- 1/2 tsp salt
Vanilla cheesecake

- 230g cream cheese
- 80g caster sugar
- 1 egg
- 2 tsp vanilla extract
Instructions
Chocolate Brownies

- Melt the dark chocolate and butter in the microwave, 20 secs at a time. Set aside to cool.
- Mix the eggs, sugar & vanilla extract with an electric beater/stand mixer until creamy, fold in the cooled chocolate butter mix with a spatula.
- Sieve the flour and cocoa together, add to the egg mix, fold in with spatula. Set aside.
- Cheesecake layer: mix all the ingredients mix together until combined.
- Pour half the brownie mix into a lined 20cm brownie tin, then spread the cheesecake mix on top, then the remaining brownie mix.
- Sprinkle chopped chunks of dark chocolate on top, bake @170c for 20 mins if you want the brownies to be extra fudgy. Or 25-30mins if you do not want them extra fudgy.

OK, I’m a little confused. In the top portion you talk about melting white chocolate for the filling but in the recipe it says cream cheese. Is the recipe correct? Hope so, making these tomorrow
