Ingredients
Rolls
- 1.5 cups/ 354ml Whole milk
- 6tbsp / 75g butter
- 4 cups +4tbsp / 500g plain flour
- 1/3 cup + 1tbsp / 70g caster/granulated sugar
- 1 packet / 7g fast action dry yeast
- 1tsp salt
- 1 medium/large egg
Brownie Nutella filling
- 300g Nutella/chocolate spread of your choice
- 4 full size brownies or you can buy a tub of bite size ones in the supermarket. Try to get the most fudge ones you can find!
- 100g chopped dark chocolate
- 1tbsp cinnamon

- Warm the milk and butter in the microwave for 40 seconds -1 minute. You want it to be warm not hot so it doesn’t kill the yeast. Set aside.
- Add the flour, salt, yeast and sugar in a bowl.
- Add half 3/4 of the dry ingredient in a mixing bowl or stand mixer.
- Add the egg and the wet ingredients. Using the dough hook attachment on the hand held or stand mixer, mix until combined then add the remaining flour.
- Dust the counter with flour and take out the dough. It will be very sticky.
- Knead on the counter for 8 minutes, add up to 1 cup of flour whilst kneading to make the dough less sticky. It’s done when you press the dough with your finger and it bounces back.
- Oil a clean bowl with vegetable oil then place the dough inside.
- Cover with a clean dish cloth and place in a warm area for 1 hour or until the dough has doubled in size. Alternatively turn your oven on for 10 minutes at 160c fan, then open the door to let some of the heat out. Once the inside of the oven is warm but not too hot, place the bowl with the dough inside and a dish cloth on top.
- Whilst the dough is rising cut the brownies into small cubes, cover so they do not become dry.
- Once the dough has risen, punch the air out of the dough.
- Dust the counter with flour and roll out the dough into a large rectangle. The dough should be approximately 1cm thick.
Assemble
- Spread the Nutella over the dough, sprinkle the cinnamon then the brownies pieces and chopped dark chocolate.
- Use a pizza cutter and cut the dough into 10 strips horizontally.
- Roll the strips up to make the rolls and place them in a baking tray.
- Cover the rolls with a dish cloth and place in a warm place for 30-40mins.
- Bake the rolls in the oven at 175c/350f for 20-25 minutes.
- Serve warm, best eaten the same day. If eating the next day heat the rolls in the microwave for 20 seconds or until soft.
