Ingredients

Chocolate fudge cake

  • 200g dark chocolate (50%-60% cocoa)
  • 100ml vegetable oil
  • 150g unsalted butter
  • 200g caster sugar
  • 100g soft light brown sugar
  • 3 eggs
  • 35g cocoa powder
  • 220g plain flour
  • 1/2tsp salt
  • 1.5tsp baking powder
  • 1tbsp vanilla extract
  • 250ml boiling water

Chocolate ganache

  • 200g dark chocolate (50%-60% cocoa)
  • 200g milk chocolate
  • 200ml double/heavy cream

Instructions

Chocolate fudge cake

  1. Melt the butter and the chocolate together in the microwave.
  2. Into the same bowl add the vegetable oil, caster sugar, soft light brown sugar and vanilla extract. Mix together until all the ingredients are combined.
  3. Add the eggs, one at a time, mix until combined.
  4. In a separate bowl add the flour, cocoa, salt and baking powder. Sift the in the wet ingredients.
  5. Pour 1/3 of the boiling water over the cake batter, stir using a spatula until just combined. Repeat until all the boiling water has been mixed into the batter. (do not over mix)
  6. Pour the cake batter into a 9" or 10" cake tin. Bake for 40-50 mins at 170c. The cakes should still be fudgy inside when you remove them from the oven.

Chocolate ganache

  1. Chop the dark chocolate into small pieces and put into a bowl.
  2. Heat the cream on its own in the microwave for 1 minute. Once hot and bubbling, pour over the chocolate.
  3. Let it sit for 1min, then stir to combine.
  4. Let the ganache cool until it becomes a thicker consistency. You can place the chocolate ganache on the fridge to speed up the process but do not let it set hard.

Assemble

  1. Once the cake has completely cooled, flip the cake upside down.
  2. Place large spoonfuls of chocolate ganache the on top of the cake.
  3. Melt some chocolate and drizzle on top.
