Now I’m clearly becoming the queen of secret fillings, so you know I would not be able to resist stuffing them full of delicious Biscoff spread! I mean you can’t have Christmas without Biscoff…

How to make melted snowman biscoff brownies?

  • Melt the dark chocolate and butter in the microwave, 20 secs at a time. Set aside to cool.
  • Mix the eggs, sugars & vanilla extract with an electric beater/stand mixer until creamy, fold in the cooled chocolate butter mix with a spatula.
  • Sift the flour and cocoa into the wet ingredients, fold in with spatula. Set aside.
  • Pour half the brownie mix into a lined 20cm brownie tin, then pour the slightly warm Biscoff on top, then the remaining brownie mix.
  • Bake at 170c fan for 28-30 mins. Set aside to cool completely before decorating.

Ingredients

Brownies

  • 170g butter
  • 200g dark chocolate
  • 160g plain flour
  • 50g cocoa powder
  • 3 eggs
  • 200g caster sugar
  • 60g light brown sugar
  • 1tbsp vanilla extract
  • 1/2 tsp salt

Biscoff spread filling

  • 1 cup smooth Biscoff spread

Melted snowman

  • 9 marshmallows
  • Orange fondant icing
  • Orange & black gel food colouring tubes

Instructions

Biscoff brownies

  1. Melt the dark chocolate and butter in the microwave, 20 secs at a time. Set aside to cool.
  2. Mix the eggs, sugars & vanilla extract with an electric beater/stand mixer until creamy, fold in the cooled chocolate butter mix with a spatula.
  3. Sift the flour and cocoa into the wet ingredients, fold in with spatula. Set aside.
  4. Pour half the brownie mix into a lined 20cm brownie tin.
  5. Warm the Biscoff spread in the microwave for 10 seconds to make it a bit runny, then pour the slightly warm Biscoff on top, then the remaining brownie mix.
  6. Bake at 170c fan for 28-30 mins. Set aside to cool completely before decorating.

Snowman marshmallow heads

  1. Roll the orange fondant icing into very small carrot nose shapes.
  2. Using orange gel food colouring, make a very small dot on the marshmallow so you can stick on the fondant carrot nose.
  3. Using the black gel food colouring, make dots on the marshmallow to create eyes and a mouth.

Melted snowman 

  1. Mix the water and icing sugar together, add into a piping bag.
  2. Pipe a border around the top of the brownie, then fill in the middle.
  3. Place the snowman marshmallow head on top in the corner.
