- Cut 2 thick slices of Brioche/challah/farm loaf bread.
- Add the eggs, milk, vanilla and caster sugar in a bowl. Mix together using a whisk.
- Dip the bread in the egg mixture, then fry on each side on a low heat until golden brown.
Peaches
- Heat the peaches in a frying pan with the syrup. Save 1/4 cup of the syrup.
- Mix together the 1/4 cup of syrup and the cornstarch, if it is lumpy push it through a sieve.
- Add 1tbsp of light brown sugar, cinnamon and the cornstarch mix.
- Gently stir together, once the syrup has thicken a little remove from the heat.
Cobbler/crumble topping
- Crush Digestive biscuits into small crumbs, pour over the melted butter, cinnamon and dark brown sugar.
- Mix together until combined. Set aside.
Assemble
- Place the French toast on a plate, top with the peaches, cobbler/crumble topping, vanilla ice cream and caramel sauce.

Peaches
- Can of sliced peaches in syrup
- 1tsp cinnamon
- 2tbsp caster sugar
- 1tbsp cornstarch
Cobbler
- 100g/6 digestive biscuits
- 60g melted butter
- 1tsp cinnamon
- 1.5tbsp soft dark brown sugar
Caramel sauce
- Do not need to make from scratch, use your favourite store bought sauce.
