What do these super cute ice cream cups taste like?
They are the perfect summery dessert, so creamy and the lemon raspberry flavour complements each other so well. I love serving ice cream inside the actual fruit, it makes it much more exciting and screams summer is here!

So what exactly is Limoncello?
Limoncello is an Italian liqueur which is traditionally served chilled as an after-dinner digestivo (it is meant to aid digestion after a meal)
Do I have to use Limoncello?
Not at all, if you don’t have any that’s fine. Just double the amount of lemon juice in the recipe.

How to make this easy no churn ice cream…
- Cut 2 large lemons in half (long ways) and remove the flesh. Set aside until you have made the ice cream mix.
- Mix together cream cheese and double cream with a spatula.
- Add caster sugar then mix together with the spatula until all combined.
- Add Limoncello, mix until combined, then add lemon juice and mix until combined.
- Add a handful of raspberries, mix into the ice cream mix using the back of a spoon.
- Remove the flesh then scoop the ice cream mix into the lemon cups.
- Pop in the freezer until frozen.

Ingredients
- 200g cream cheese
- 1/2 cup / 120ml double cream
- 4-5tbsp caster sugar
- 10ml Limoncello
- 10ml lemon juice
- Handful of raspberries
Instructions
- Cut 2 large lemons in half (long ways) and remove the flesh. Set aside until you have made the ice cream mix.
- Mix together 200g of cream cheese and 1/2 cup/120ml double cream with a spatula.
- Add 4-5 tbsp caster sugar, mix together with the spatula until all combined.
- Add 10ml Limoncello, mix until combined, then add 10ml lemon juice, mix until combined.
- Add a handful of raspberries, mix into the ice cream mix using the back if a spoon.
- Scoop the ice cream mix into the lemon cups.
- Pop in the freezer until frozen.
