170g dark chocolate (use dark chocolate between 50%-60% cocoa)
160g plain flour
40g cocoa powder
3 medium eggs
200g caster sugar
60g soft light brown sugar
1tbsp vanilla extract
1/4 tsp salt
10-12tsp Nutella
Pancakes
160g plain/all purpose flour
2 medium eggs
300ml whole milk
1tbsp sunflower oil or melted butter
1tbsp vanilla extract
1tsp cinnamon
pinch of salt
Instructions
Brownies
Line a 20x20cm brownie tin with baking paper.
Melt the dark chocolate and butter in the microwave, 20 secs at a time. Mix together, make sure the melted chocolate and butter are well combined. This stops the brownie batter from splitting. Set aside.
Mix the eggs, sugar & vanilla extract in a separate bowl with an electric beater/stand mixer for 3 mins until creamy.
Fold in the melted chocolate and butter mix with a spatula.
Sift half the flour, cocoa and salt into the wet ingredients, fold in with a spatula. Repeat with the remaining dry ingredients until combined.
Fold in the optional dark chocolate chunks.
Spread half the brownie batter in the tin, use a spatula to make sure it's even.
Spoon 4 heaped tbsp of Nutella on top of the brownie layer, then the remaining brownie batter on top.
Bake in the oven at 170c fan for 25mins. (The more you bake the brownies the less fudgy they will be.)
Pancakes
Sift the flour into a mixing bowl, add all the ingredients.
Mix together using an hand held mixer until smooth.
Fry the pancakes until golden brown on each side on a low to medium heat.
I made my pancakes a little smaller than the full size of the pancake pan, as the brownies are small. You should get 12 pancakes. I made mine approx 7-8" wide.
Assemble
Once the brownie have cooled, remove cut off the hard edges of the brownies (don't cut off too muc) then cut them into 12 pieces (so you have 12 mini rectangles)
Place a brownie in the middle of the pancake, then warp it up like a burrito, see the video above for guidance.
To serve, heat them up between 10-15 seconds, they taste much nicer warm!
Drizzle some melted chocolate on top, then it's up to you if you want to dip them in more melted chocolate! Or even set up a burrito making station and have a selection of dips like Nutella, Biscoff or caramel sauce.
