My S’mores Lava Cake is incredibly easy to make and perfect for sharing. Essentially, it’s a large chocolate lava cake topped with rich chocolate ganache and gooey toasted marshmallows. If you’re a chocolate lover, this decadent dessert is a must-try.

It’s an ideal cake to share with a loved one on date night or even Valentine’s Day. When you cut into it, the molten lava center oozes out, creating an amazing visual that tastes absolutely divine!

With the cold weather currently sweeping across the UK, I can’t think of anything better than curling up on my sofa with this S’mores lava cake and binge-watching my favorite Netflix series… literally, heaven.

This cake look amazing but what are S’mores?

S’mores are a classic, beloved treat that evokes images of cozy campfires and warm, nostalgic moments. Traditionally made by sandwiching a toasted marshmallow and a piece of chocolate between two graham crackers, this simple yet indulgent snack has become a symbol of outdoor adventures and summer nights.

The warm, gooey marshmallow melts the chocolate, creating the perfect balance of sweetness and texture. Whether enjoyed around a campfire or recreated in a variety of creative ways, s’mores offer a timeless combination of flavors that bring people together to share in a deliciously sweet experience.

I decided to put toasted marshmallows on top of this oozy chocolate cake to make it even more cosy. This cake have a wintery vibe that make it the perfect cold season dessert, but of course you can make it all year round!

What does this S’more lava cake taste like?

This s’mores lava cake is a rich, velvety chocolate cake that melts in your mouth. It is super decadent and one of my favourite chocolate cakes. When you cut into the cake, the warm, gooey center oozes out, revealing the molten chocolate lava that takes the flavor to a whole new level. The contrast between the slightly firm outer layers and the soft, gooey interior creates the perfect balance of textures.

This dessert is the perfect combination of smooth, rich chocolate with just the right amount of warmth and sweetness, making it the ultimate cosy and romantic dessert.

What ingredients do I need to make these S’mores Lava Cake?

The lava cake is made with only 5 ingredients, most of them you most likely already have then in your kitchen.

You will need the following ingredients:

Brownies

  • Unsalted butter: Cut into small pieces so it’s easier to melt.
  • Caster/granulated sugar : Caster sugar is best as it is superfine, but if you can’t get this granulated is fine.
  • Salt (optional): Enhances the chocolate flavour and balances the sweetness.
  • Dark chocolate: Use good quality dark chocolate that’s between 70% cocoa for the cake.
  • Plain flour: Also called all purpose flour.
  • Eggs: Three medium size eggs.

Chocolate ganache

  • Dark chocolate: 50% cocoa is best for the ganache so it is not too bitter.
  • Double cream: If you can not find double cream, heavy cream is fine.
  • Golden syrup: To slightly sweeten the ganache. Taste it 1st to decide if you need to sweeten the ganache before you add there golden syrup. If you can not het golden syrup use honey or your syrup of choice.

Marshmallows

  • Marshmallows: you will need a kitchen torch to torch the marshmallows.

What equipment do I need to make these S’mores lava cake?

You do not need a lot of fancy equipment to make these S’mores lava cake, here’s a list below:

  • Mixing bowls
  • Hand held mixer
  • Spatula
  • Spoons
  • Sieve
  • Scale
  • 7″ cake tin (8″ if you don’t have 7″)
  • Baking/parchment paper
  • Kitchen torch

Tips for making the perfect S’mores Lava cake?

This cake is simple to make with just five ingredients, but to ensure it turns out perfect, here are some key tips:

  1. Choose High-Quality Ingredients
    Use high-quality chocolate with at least 60-70% cocoa for a rich, deep flavor. Fresh eggs and real butter also make a noticeable difference in both texture and taste, so don’t skimp on these essentials.
  2. Don’t Overmix
    Mix the ingredients just until combined to avoid overworking the batter, which can make the cake dense and heavy. Keep the texture light and airy by gently folding the ingredients together.
  3. Control the Baking Time
    The key to a molten center lies in the precise baking time. The longer you bake it, the less molten the center will be. For a gooey, oozing lava effect when you cut into the cake, bake for 20 minutes. If you prefer a less runny center, bake for 25 minutes for a firmer consistency.

Should you eat this cake hot or cold?

Individual molten lava cakes are typically served warm, straight from the oven, for the best gooey texture. However, with this S’mores lava cake, serving it immediately isn’t ideal—it would collapse when sliced. Instead, allow it to cool for 40 minutes to an hour so it can set slightly while still retaining its gooey center.

If the cake cools completely, don’t worry! You can easily reheat a slice in the microwave to enjoy that warm, melty texture once again.

Do I have to top the cake with chocolate ganache and marshmallows? Or can I serve it plain?

The choice is entirely yours! This lava cake is delicious on its own, with no toppings needed. However, if you’re making it for a special occasion, why not elevate it with a drizzle of rich chocolate ganache and some toasted marshmallows for an extra indulgent touch?

For a simpler option, perfect for a casual Friday night dessert, you can dust it with cocoa powder or garnish it with fresh strawberries instead.

How to make this S’more lava cake?

Chocolate lava cake

  • Chop the dark chocolate and butter into small pieces.
  • Melt them together in the microwave, 20 seconds at a time. Mix together well. Set aside.
  • In a seperate bowl add the eggs and sugar. Mix until it becomes white and a bit creamy.
  • Sift in the flour and salt, fold into the mixture using a spatula until combined. Do not over mix.
  • Pour in the melted chocolate and butter mix.
  • Fold into the mixture using a spatula.
  • Pour into a lined 7″cake tin. (You can use an 8″ cake tin but the cake will be lower in height)
  • Bake the cake at 200c fan for 20- 25 mins. If you want the inside to ooze out when you cut the cake then cake for 20 mins. Bake for 25 mins if you want the cake to be a but more solid but still fudgy.

Chocolate ganache

  • Once the cake has almost cooled chop the dark chocolate into very small pieces and put into a bowl.
  • Heat the cream on its own in the microwave for 1 minute. Once hot, pour over the chocolate.
  • Let it sit for 1min, then stir to combine.
  • Stir in the golden syrup ir syrup of choice to sweeten.
  • Let the ganache cool a little before you pour it over the cake.
  • If it cooled to much and is not runny, you can heat it in the microwave for 10 seconds.
  • Assemble
  • Pour the chocolate ganache on top of the cake (you do not have to use all, you can save some for serving)
  • Push it over the sides of the cake and let the drips run down.
  • Place the marshmallow on top in a heap, torch with a kitchen torch.
