Tiramisu Nutella Brownies

Tiramisu Nutella Brownies are my favourite brownies. They are a combination of everything that I love – a creamy Tiramisu topping, fudgy brownies and Nutella. Literally what is there not to like, there is something for everyone which means they will be a hit with your all your friends and family.

These delicious brownies not only taste amazing they also look impressive. The ladyfingers poking through the fudgy brownie layer, then the creamy mascarpone cream topped with a dusting of cocoa. Stunning!!

Another reason I love these brownies, is they look amazing but are not hard to make at all. I mean who doesn’t love a easy dessert that looks great that doesn’t take hours to make…me!

What ingredients do I need to make these Tiramisu Nutella brownies?

You will need the following ingredients:

Brownies

  • Unsalted butter: Does not have to be room temperature because you will melt it in the microwave with the chocolate. Also unsalted means you can control the amount of salt added.
  • Caster/granulated sugar : Caster sugar is best as it is superfine, but if you can’t get this granulated is fine.
  • Soft light brown sugar: To give the brownies a slightly caramel flavour and fudgy texture.
  • Salt: Enhances the chocolate flavour and balances the sweetness.
  • Dark chocolate: Use dark chocolate that’s between 50-60% cocoa. Anything higher for this recipe and the brownies will be too bitter.
  • Plain flour: Also called all purpose flour.
  • Cocoa powder: To enhance the chocolate flavour into these brownies, and to dust the top.
  • Vanilla extract: Vanilla enhances the flavour of chocolate, I always add vanilla in my chocolate bakes.
  • Eggs: Three medium size eggs.

Lady fingers/sponge fingers

  • Lady fingers/sponge fingers: 16 should be enough to fit a 20cm x 20cm brownie tin.
  • Coffee granules: Mixed together with warm water, then brushed over the lady fingers just like you would when making Tiramisu.

Tiramisu topping

  • Mascarpone cheese: try to get a smooth and creamy Mascarpone cheese. Sometimes they can be a bit dry and crumbly.
  • Double/heavy cream: you want tot use cream that has around 48% fat.
  • Marsala wine: to add a tiramisu flavour and flavour to the topping.
  • Icing sugar: To sweeten the Tiramisu topping
  • Coco powder: To dust on top, which gives the brownies their classic tiramisu look.

What equipment do I need to make these Tiramisu Nutella brownies?

You do not need a lot of fancy equipment to make these Tiramisu Nutella brownies, here’s a list below:

  • Mixing bowls
  • Hand held mixer
  • Spatula
  • Spoons

  • Scale
  • Brownie tin 20cmx20cm
  • Baking/parchment paper
  • Piping bags/zip lock bags

Tips for making the perfect Tiramisu Nutella brownies?

These brownies are easy to make, but here’s some tips to make sure they are perfect:

Tiramisu Nutella Brownie making tips:

  • Dark chocolate: Use dark chocolate that’s between 50-60% cocoa. Anything higher for this recipe and the brownies will be too bitter.
  • Melt the butter and chocolate together: After the have melted, make sure to mix well to combine. this stops the brownie batter from separating. Ver important step.
  • Ladyfingers/sponge fingers: Brush them I the coffee mixture on both sides, but do not dip them in it, they will become to soggy and you will not keep their shape in the brownies. you want to see the ladyfingers when you slice the brownies, if they are too wet with the coffee mix they will look like brown mush.
  • Do not over bake: Slightly underbaking ensures a gooey texture, which pairs beautifully with the creamy mascarpone layer.
  • Mascarpone cream: It an be a little temperamental if you over mix it. The texture can become a but like cottage cheese and start to ooze liquid.
  • Piping bag: if you do not have a piping bag, use a zip lock bag. The tiramisu swirls do not have to be perfect as they will be covered in cocoa powder.

How to line a brownie tin?

The way I line my brownie tins is super easy, all you need is two long strips of baking paper, spray oil/melted butter and crocodile clips.

Start by greasing the brownie tin so the baking paper sticks, then cut two long strips og baking paper. Lay the first strip of baking paper, then spray the top with spray oil, then stick the second strip in the opposite direction on top.

When its time to remove the brownies from the brownie tin, just life them out holding the baking paper!

To stop the end of the baking paper flapping around in the oven, use metal crocodile clips to secure them. Just make sure they al made from metal, NO plastic. See the image below.

I don’t want to use coffee on the lady fingers, what could I use instead?

You could use cocoa powder mixed with hot water. This is a great substitute as you still get a butter flavour similar to coffee from the cocoa.

How to make Tiramisu Nutella Brownies?

Brownies

  • Line a 20x20cm brownie tin with baking paper.
  • Melt the dark chocolate and butter in the microwave, 20 secs at a time. Mix together, make sure the melted chocolate and butter are well combined. This stops the brownie batter from splitting. Set aside.
  • Mix the eggs, sugar & vanilla extract with an electric beater/stand mixer for 3 mins until creamy.
  • Fold in the melted chocolate and butter mix with a spatula.
  • Sift half the flour, cocoa and salt into the wet ingredients, fold in with a spatula. Repeat with the remaining dry ingredients until combined.
  • Fold in the optional dark chocolate chunks.
  • Spread half the brownie batter in the tin, use a spatula to make sure it’s even.
  • Spoon 10-12tsp of Nutella on top of the brownie layer.
  • Add the coffee granules and 100ml boiling water in a small bowl.
  • Brush the sponge fingers on both sides with coffee, then place on top of the brownie layer. Do not soak them all the way through, they will become too soft and loose their shape.
  • Place the ladyfingers on top, then spread the remaining brownie batter on top.
  • Bake in the oven at 170c fan for 25mins. (The more you bake the brownies the less fudgy they will be.)

Tiramisu topping 

  • Once the brownies have completely cooled, add the mascarpone in a mixing bowl. Use an electric beater to mix until smooth and creamy.
  • Add half the cream, marsala wine and icing sugar mix together, then add the remaining cream.
  • Mix until it thickens, do not over mix.
  • Add the mascarpone cream into a piping bag, pipe small swirls on top of the brownies.
  • To finish dust with cocoa.

Ingredients

Brownies

  • 160g butter
  • 170g dark chocolate (use dark chocolate between 50%-60% cocoa)
  • 160g plain flour
  • 40g cocoa powder
  • 3 medium eggs
  • 200g caster sugar
  • 60g soft light brown sugar
  • 1tbsp vanilla extract
  • 1/4 tsp salt
  • Optional - 40g dark chocolate chunks
  • 16 Ladyfingers/sponge fingers
  • 10-12tsp Nutella
  • 2tbsp Coffee granules (for ladyfingers/sponge fingers)

Tiramisu topping

  • 250ml double/heavy cream
  • 250g mascarpone cheese
  • 1tbsp Marsala wine 
  • 5tbsp icing sugar
  • 1tbsp vanilla extract
  • Cocoa powder for dusting
