How do I make these S’mores Nutella brownie cupcakes?
Biscuit layer
- Add 12 cupcake cases in a cupcake tin.
- Blitz the biscuits/graham crackers in a food processor until you have fine crumbs.
- Melt the butter in the microwave, stir into the crumbs.
- Add 3-4 tsp of the crumbs into each cupcake case. push down using the back of the spoon. Set aside whilst you make the brownies.
Brownies
- Melt the dark chocolate and butter in the microwave, 20 secs at a time. Mix together, make sure the melted chocolate and butter are well combined. This stops the brownie batter from splitting. Set aside.
- Mix the eggs, sugar & vanilla extract with an electric beater/stand mixer for 3 mins until creamy.
- Fold in the slightly cooled melted chocolate and butter mix with a spatula.
- Sift half the flour, cocoa and salt into the wet ingredients, fold in with a spatula. Repeat with the remaining dry ingredients until combined.
- Add 2 large tbsp of brownie batter into each cupcake case.
- Bake in the oven for 22mins @170c fan.
- Set aside to cool.

- 16 Digestive biscuits/Graham crackers
- 8-9tbsp melted butter
Brownie
- 160g butter
- 170g dark chocolate (use dark chocolate between 50%-60% cocoa)
- 160g plain flour
- 30g cocoa powder
- 3 medium eggs
- 200g caster sugar
- 50g soft light brown sugar
- 1tbsp vanilla extract
- 1/4 tsp salt
Chocolate drizzle
- 100g dark chocolate
Other items needed
- 12 tbsp Nutella/chocolate spread of choice
- Small-medium bag mini marshmallows
- 12-14 cupcake cases
Instructions

- Once the brownies are cool, cut a hole in the top of each one, spoon Nutella inside each hole.
- Melt the dark chocolate in the microwave, 20 seconds at a time. Pour on top of each brownie cupcake.
- Top with mini marshmallows, toast with a kitchen blow torch.
