Ingredients
Brownie
- 170g butter
- 200g dark chocolate
- 160g plain flour
- 50g cocoa powder
- 3 eggs
- 200g caster sugar
- 60g light brown sugar
- 1tbsp vanilla extract
- 1/2 tsp salt
Vanilla cheesecake
- 230g cream cheese
- 30g caster sugar
- 1 egg yolk
- 1tbsp vanilla extract
Chocolate ganache
- 100g dark chocolate
- 150ml double cream
Cherry topping
- 1 can cherry pie filling (410g)
- Fresh cherries
Instructions
Cheesecake filling
- Mix all the ingredients mix together using an electric beater/stand mixer until combined.
- Set aside whilst you make the brownie mixture.
Chocolate Brownies
- Melt the dark chocolate and butter in the microwave, 20 secs at a time. Set aside to cool.
- Mix the eggs, sugar & vanilla extract with an electric beater/stand mixer until creamy, fold in the cooled chocolate butter mix with a spatula.
- Sieve the flour and cocoa together, add to the egg mix, fold in with spatula. Set aside
- Pour half the brownie mix into a lined 7" or 8" round loose bottom cake tin.
- Gently spread the cheesecake mix on top, then the remaining brownie mix.
- Bake @180c for 35-40 mins.
Chocolate Ganache
- Chop the dark chocolate into small pieces, then pour into a bowl.
- Heart the cream for 1 minute in the microwave, pour over the chopped chocolate. Leave it for 2-5 mins to melt the chocolate.
- Pour 2tbsp golden syrup (or your syrup of choice) into the ganache, mix together until smooth. Set aside to cool.
Assemble
- Once the brownie cake has completely cooled, spread the cooled chocolate ganache on top.
- Add the cherry pie filling and fresh cherries on top.
- Do not refrigerate as the middle is very fudgy, it will solidify and change the gooey texture.

Hi! No it’s not necessary, the ganache will be a bit bitter but the sweetness from the brownies and cherry sauce balances it out. I have made it without the syrup before and enjoyed it!
Hi, my brownie batter won’t bake at the bottom but it fine on the top, do you think I overfilled the pan? I used an 8 inch round pan. I don’t want to over bake it yet again I don’t want uncooked cake! Please help.
