What is Monkey bread?

No, it’s not a type of bread made by monkeys, or for monkeys, or with monkeys. It’s actually a delicious and easy-to-make dessert that consists of bite-sized pieces of dough coated in cinnamon sugar, and baked in a bundt pan. The result is a gooey, pull-apart treat that you can enjoy with your family and friends.

Monkey bread gets its name from the way it is eaten, picking pieces off like how monkeys groom each other. Now I think about it, thats kinda weird to name food after a monkey grooming session…. but it does taste delicious. All you need are some basic ingredients, a bundt pan, and an oven. Apple pie monkey bread, please explain?

You know by now that I love a dessert mash up and I thought being Fall/Spooky season why not take it up a notch and make it an apple pie monkey bread. When your monkey bread comes out the oven, you drizzle the apple caramel sauce all over. The cinnamon sugar dough with the apple caramel sauce is a match made in dessert heaven. I explain below how to make this delicious spooky monkey bread.

How to make monkey bread?

  • Preheat your oven to 350°F and grease a bundt pan.
  • In a small bowl, whisk together caster sugar and cinnamon. Set aside.
  • Once you have made the dough, weigh 20g-25g size balls.
  • Roll each ball in the cinnamon sugar then put in the Bundt pan.
  • Pour the butter and brown sugar glaze over the top of the dough balls in the bundt pan.
  • Bake for 25-30 minutes or until golden and bubbly.
  • Let the bread cool slightly in the pan before inverting it onto a large plate or platter.
  • Whilst the monkey bread is in the oven make the apple caramel sauce, set aside to cool and thicken.
  • Pour over the monkey bread and enjoy whilst warm and on the same day.

Ingredients

Monkey bread

  • 220ml whole milk
  • 7g sachet dry activated yeast 3tbsp caster sugar
  • 1 egg
  • 50g salted butter
  • 1/2 teaspoon salt
  • 390g plain flour or bread flour

Monkey bread glaze

  • 113g or 1/2 cup butter
  • 120g or 1 cup light brown sugar

Caramel apple sauce

  • 200g soft dark brown sugar
  • 160ml double cream
  • 150g butter
  • 1/2 tsp salt
  • 3 apples

Instructions

Monkey bread

  1. Add the milk into a measuring jug, heat in the microwave for 60 seconds. Once the milk is warm but you can comfortably put in your finger add the yeast and sugar. Stir to combine, then leave for 5-6 mins.
  2. Add the flour, egg, butter and salt into a mixing bowl or stand mixer. Pour in half the wet ingredients and mix for 1 minute, then add the rest. Mix for 4-5 mins in the stand mixer or by hand on a flour dusted counter. If it's too wet, add a little more flour.
  3. Lightly grease a bowl, add the dough then cover with cling film for 1 hour. The dough should double in size.
  4. Punch the air out of the dough and place on the counter, cut the dough into 20g-25g balls.
  5. layer them in the Bundt pan, not all the way to the top as the dough needs space to rise.
  6. Cover with cling film for 20 mins, make the glaze whilst it's rising.
  7. Pour the hot glaze over the monkey bread, bake in the oven at 180c/160c fan for 30-35 mins or until risen and golden brown.

  1. Heat the butter and light brown sugar in a sauce pan , low-med heat until combined.
  2. Pour over the monkey bread before baking it in the oven.

Caramel apple sauce

  1. Add all the ingredients in a sauce pan, heat low-med until everything is combined, stir gently to not create too many bubbles.
  2. Set aside to cool, the longer it cools the thicker it will be.

Assemble

  1. Remove the monkey bread from the oven, let it rest for 5 mins before removing from the pan.
  2. Pour the caramel sauce over the edges of the monkey bread without the apples.
  3. Using a spoon place the apples from the sauce on the all the way around the top of the monkey bread. This method stops too much of the apples falling into the hole in the middle.
