Aperol Spritz Ice Cream

Aperol spritz ice cream is officially my favourite ice cream to make at home. The creamy Mascarpone and cream cheese mixed with the fresh orange juice and Aperol are a match made in heaven. My recipe is super easy and only has 5 ingredients.

The best part is it’s no churn so you don’t need any fancy equipment. Just mix it up and freeze!

I’ve heard of Aperol but what is it exactly?

Aperol is a bright orange apéritif liqueur. It is supposed to stimulate your appetite and would be consumed before your dinner. Aperol these days is better known in the popular summer cocktail Aperol Spritz which is Prosecco, soda water and a splash of Aperol…Yum!

So how do you make Aperol Spritz ice cream?

  1. Cut 4 med size oranges in half, then cut out the flesh. Set aside.
  2. Zest the 5th orange , then cut in half. Squeeze the juice and set aside.
  3. Add 250g Mascarpone and 250g of cream cheese into a mixing bowl.
  4. Add 70ml  of freshly squeezed orange juice, 50ml Aperol, 6-7 tbsp honey (add more if you would like it sweeter) and the orange zest.
  5. Mix until smooth and combined with an electric beater.
  6. Scoop the mixture into the orange cups and pop in the freezer for 6 hours or overnight. In total you should have approx 8 cups filled with ice cream.

Ingredients

Aperol spritz ice cream

  • 250g Mascarpone 
  • 250g Cream cheese
  • 1 med/large orange
  • 70ml freshly squeezed orange juice
  • 50ml Aperol
  • 6-7 tbsp honey (add more if you would like it sweeter)
  • zest from 1 orange

To serve

This recipe makes approx. 8 orange cups. If want to serve all the ice cream in orange cups you will need 5 oranges in total. One to make the ice cream and 4 to serve it in.
