If you love churros and you love s’mores, this dessert is about to become your new obsession. These baked churro s’mores are made with soft, cinnamon-sugar churro discs baked instead of fried, then grilled with melted chocolate and gooey marshmallow before being sandwiched together and smooshed. They’re crispy on the outside, molten in the middle, and proof that the best desserts happen when two classics collide.

1 cup / 225ml water

115g butter

2 tbsp caster sugar

145g plain flour

1/4 tsp salt

3 eggs

Instructions

Add water, butter and sugar to a saucepan and heat until everything has melted.

Add the flour and salt, stirring until a dough forms and starts to pull away from the sides.

Remove from the heat for 2 minutes. Lightly mix the eggs together, then slowly add them to the dough until fully incorporated.

Transfer the dough to a piping bag fitted with a star tip. Pipe circles onto a lined baking tray and bake for 18–20 minutes at 180°C.

Brush the baked churros with melted butter and coat in sugar.

To make the s’mores: place chocolate and a marshmallow on top of an upside-down churro, grill for 3–5 minutes, then place another churro on top and smoosh!
