Brownie Cookies: A Fudge-tastic Treat!

What do these Brownie Cookies taste like?

They literally taste like if a brownie and a cookie had a baby…they are fudgy and packed full of chocolate chunks.

Why chocolate chunks and not chips?

I’m going to have to hide from the chocolate chip police but I personally prefer chocolate chunks. They melt better in the oven versus chocolate chips that are designed to hold their shape.

How do I make these brownie cookies?

  • Cream the sugars and softened room temp butter together until fluffy and pale.
  • Add the egg, vanilla extract and mix until combined.
  • Add the flour, cocoa powder, bicarbonate of soda and corn flour, and mix using a spatula until the dough comes together.
  • Add the chocolate chunks, and leave some back to put on top of each cookie.
  • Pop the dough in the fridge for 30 mins-1 hour.
  • Using an ice cream scoop, add 6 cookies onto a lined baking tray.
  • Push chocolate chunks on top of each cookie then bake at 170c for 12 minutes.
  • Sprinkle with cracked sea salt.

Ingredients

  • 1/2 cup /113g salted butter
  • 1/2 cup/ 100g  caster sugar
  • 1/2 cup/ 80g soft brown sugar
  • 1 egg
  • 1 tbsp vanilla extract
  • 3/4 cup flour
  • 1 tbsp cornflour
  • 1/2 tsp baking soda
  • 1/2 cup cocoa powder
  • 200g dark chocolate chunks
  • Cracked sea salt

  • Add the chocolate chunks, leave some back to put on top of each cookie.
