If you love CHURROS, ECLAIRS and DOUGHNUTS…then you need to run to the kitchen and make these Churro Eclair doughnuts pronto! Now you are probably wondering how does this all work but trust me it was the best thing I ate all week.

Now let me explain why this works, churros and eclairs are made from the same pastry…choux pastry. So is recipe more of an eclair, the answer is yes. The edition of cinnamon sugar makes them taste like churros and the round shape makes them look like doughnuts.

How do you get the cream inside?

Easy! You pipe it in at the back. You make 3-4 small holes and pipe the whipped cream inside. You have to be a bit careful not to pipe it in to fast others the churro eclair doughnut might burst.

When should I make these churro eclair doughnuts?

You can make them whenever you like but here is a few reasons:

  • You could make them for afternoon tea, or a brunch.
  • For you friends or family birthday breakfast or lunch who love eclairs, churros and doughnuts.
  • if you want to try making choux pastry, it’s always fun learning to make something new.

How do I make these churro eclair doughnuts?

  • Heat the water, butter & sugar in a saucepan on a medium heat.
  • Once the butter has melted stir to combine, then add the salt & flour, stir fast until it forms a dough & comes away from the sides of the saucepan. Remove from the heat to cool completely.
  • Add the dough into a mixing bowl, then add one egg at a time. Mix together using the dough hook attachments on your hand mixer. Do not add the next egg until the first one is fully combined. If you add the eggs too fast the dough will become too soft.
  • Place a sheet of baking paper on a baking tray, then draw 6  x 8cm wide circles on a baking paper sheet.
  • Put an 6b open star tip in a piping bag then add the churro dough.
  • Pipe circles using the guides that you drew on the baking paper.
  • Bake the churro eclair doughnuts in the oven at 200c fan for 20 mins. If they are golden brown bake them for another 5 mins. If they are getting too brown take them out the oven. Turn off the oven and put them back in for 5 mins.
  • Sprinkle the sugar and cinnamon on a plate and cover the churros eclair doughnuts in the sugar. You will have to rub it on with your fingers to make it stick. (as they are baked and not fried)

Ingredients

Churro eclair doughnuts

Makes 6-7

  • 115g butter
  • 2tbsp caster sugar
  • 1 cup/ 225ml  water
  • 3 eggs (small-medium)
  • 145g  plain flour
  • pinch of salt

Cinnamon sugar

  • 5tbsp caster/granulated sugar
  • 1tsp ground cinnamon

Chocolate

  • 200g melted dark chocolate (under 60% cocoa)

Whipping/double cream

  • 600ml

Assemble

  1. Once the churro eclair doughnuts have cooled, whip the cream then add it into a piping bag.
  2. Make 3-4 small holes in the back of the churro eclair doughnuts and pipe in the cream. Add the cream slowly so the they do not burst.
  3. chop the chocolate into small chunks, then melt the in the microwave 20 seconds at a time.
  4. It's up to you how to add the chocolate, either dip or drizzle!
