Tired of boring breakfast pancakes? Meet Bacon Pancake Dippers – crispy, golden bacon nestled on top of fluffy pancake batter, cooked to perfection and ready to dunk in maple syrup. They’re sweet, savoury, and ridiculously easy to make, turning your morning routine into a fun, flavour-packed treat. Perfect for brunch, weekend breakfasts, or any day you need a little upgrade to your pancakes!

Ingredients
- 140g plain flour
- 1tsp baking powder
- Pinch salt
- 1tbsp caster sugar
- 1tsp cinnamon
- 1tsp vanilla extract
- 140ml whole milk
- 1 medium egg
- 3 tbsp melted butter
- 8 slices cooked bacon

Cook the bacon:
Fry or grill the bacon until cooked but not too crispy - it will cook a little more in the pan later. Set aside. -
Make the pancake batter:
In a bowl, mix the flour, baking powder, sugar, and salt. In a separate bowl, whisk together the milk, egg, and vanilla. Combine wet and dry ingredients and whisk until smooth. The batter should be slightly thick but pourable. -
Heat the pan:
Place a non-stick frying pan over medium heat and add a small knob of butter or a drizzle of oil. -
Make the dippers:

Pour a strip of pancake batter into the pan (roughly the length of a bacon slice).

Immediately place a slice of cooked bacon on top of the batter.

Cook until bubbles form on the pancake surface and the edges look set (about 2 minutes).

Flip carefully:
Using a spatula, gently flip the bacon + pancake together. Cook for another 1–2 minutes, until golden and cooked through. -
Serve:
Transfer to a plate and drizzle generously with maple syrup. Enjoy warm!
