If you’re looking for an easy, festive Rice Krispie Christmas pudding, this no-bake Christmas treat is the perfect recipe 🎄. Made with Coco Pops instead of traditional Rice Krispies (but feel free to use either one), plus marshmallows and melted chocolate, these Rice Krispie Christmas Puddings are rich, chewy and designed to actually hold their shape – no dry or crumbly results. Because there’s no oven involved, they’re also brilliant for making with kids, making them ideal for Christmas parties, edible gifts and fun festive baking that everyone can get involved in.

Ingredients

100g Coco Pops (you can use rice krispies instead, coco pops makes it more chocolatey)

60g unsalted butter

200g milk or dark chocolate, chopped

300g mini marshmallows
- 60g white chocolate

Holly sugar decorations
Instructions

Add the butter and chocolate in a sauce pan, heat on low to medium heat until melted, stir to combine.

Add the mini marshmallows, stirring continuously, until smooth and glossy.
(The mixture should feel thick but stretchy — this is what helps everything hold together.) -
Remove from the heat and stir through the Coco Pops until fully coated. Make sure every piece of cereal is covered in the chocolate-marshmallow mixture.

While the mixture is still warm, take spoonfuls and mould into round balls in your hands.

Chill until set, 30 minutes.

Drizzle with melted white chocolate or icing to mimic custard, then finish with holly sugar decorations for a classic Christmas pudding look.
