Ingredients
Fudgy Guinness Brownies
- 160g unsalted butter
- 140g dark chocolate (70%)
- 170g plain flour
- 20g cocoa powder
- 230g caster sugar
- 60g soft light brown sugar
- 3 medium eggs
- 1 tbsp vanilla extract
- 1/4 tsp salt
- 80 ml reduced Guinness
Chocolate Baileys Cream Cheese Frosting
- 200g full-fat cream cheese (cold)
- 100g unsalted butter (softened)
- 200g icing sugar (sifted)
- 120g dark chocolate (melted & cooled slightly)
- 3-4 tbsp Baileys Irish Cream
Instructions
Fudgy Guinness Brownies
- Pour 200 ml Guinness into a small saucepan and simmer until it reduces to about 80 ml.
- Let it cool completely.
- Melt butter + dark chocolate together until smooth.
- Whisk eggs, caster sugar, and brown sugar until thick and glossy.
- Whisk in vanilla + cooled reduced Guinness.
- Fold in the melted chocolate mixture.
- Sift and fold in flour, cocoa powder, and salt.
- Pour the brownie batter into a lined 8"x8" square cake tin.
- Bake at 170–175°C fan for 25–27 minutes.
- Set aside to cool.
Chocolate Baileys Cream Cheese Frosting
- Melt the chocolate and let it cool until just warm (not hot).
- Beat the butter for 2–3 minutes until pale and creamy.
- Add the cream cheese and beat briefly until smooth (don’t overmix).
- Mix in the melted chocolate until fully combined.
- Add icing sugar gradually and beat until thick.
- Mix in Baileys, until combined and smooth.
Assemble
- Once the brownies have cooled completely, make the frosting.
- Spread it over the top of the brownies with messy swirls.
