Ingredients

Tiramisu

Ladyfinger layers

  • 6 ladyfingers

  • 1 heaped tablespoon coffee granules
  • 120ml boiling water

Tiramisu cream

  • 120ml double cream (cold)

  • 90g full-fat cream cheese (softened)

  • 40g icing sugar (adjust to taste)

  • 1 tsp almond extract (use vanilla if you don't have almond)

To finish

  • Cocoa powder, for dusting

Instructions

  • Make the coffee

    • Add the coffee granules to the boiling water. Set aside.

  • Prepare the tiramisu cream

    • In a bowl, whisk the cream cheese, icing sugar, and almond extract until smooth.

    • Pour in the double cream and whisk until thick, spoonable, and holds soft peaks.

    • Don’t overwhip - you want it silky, not stiff.

  • First layer

    • Dip 3 ladyfingers into the coffee (4 seconds per side).

    • Arrange them side by side on a plate.

    • Spoon over half of the tiramisu cream and gently spread.

  • Second layer

    • Dip the remaining 3 ladyfingers in coffee.

    • Place directly on top of the cream.

    • Spoon over the remaining tiramisu cream and smooth.

  • Finish

    • Dust generously with cocoa powder.

    • If you have time you can let it sit for 5-10 minutes so the lady fingers have more time to become soft.
