If you love desserts with layers of texture, you’re going to fall hard for these Dream Crunch Brownies. Imagine a fudgy, ultra-chocolatey brownie base, topped with a silky chocolate ganache, and finished with a crunchy chocolate-cornflake layer. Inspired by the viral dream crunch cake, this version swaps feuilletine for cornflakes, making it easier, more accessible, and just as addictive. Perfect for a show-stopping bake at home or an indulgent treat when you need that chocolate fix!

Ingredients
Brownie Layer
- 160g unsalted butter
- 140g dark chocolate (70% cocoa)
- 170g plain (all-purpose) flour
- 20g cocoa powder
- 230g caster sugar
- 60g soft light brown sugar
- 3 medium eggs
- 1 tbsp vanilla extract
- 1/4 tsp salt
Chocolate ganache layer
- 130g milk chocolate
- 130g dark chocolate (50%-60% cocoa)
- 300ml double/heavy cream
Chocolate cornflakes layer
- 120g cornflakes
- 250g milk chocolate
Instructions
Brownie layer
- Melt butter and dark chocolate in microwave in 20-second bursts, stirring between, until smooth. Set aside to cool slightly.
- Beat eggs, caster sugar, light brown sugar, and vanilla extract for 3 minutes until creamy.
- Fold in melted chocolate and butter mixture.
- Sift half the flour, cocoa powder, and salt into the wet ingredients and fold in gently. Repeat with remaining dry ingredients until just combined.
- Pour into a lined 8"x8" square tin.
- Bake for 25 minutes at 170c fan.
Chocolate ganache layer
- Once the brownies have cooled completely, make the chocolate ganache.
- Chop the dark chocolate into very small pieces and put into a bowl.
- Heat the cream on its own in the microwave for 1 minute. Once hot, pour over the chocolate.
- Let it sit for 1 min, then stir to combine.
- Let the ganache cool until it becomes a thicker spreadable consistency.
- Spread the ganache on top of the brownies.
Chocolate cornflakes layer
- Melt the chocolate, pour over the cornflakes. Mix together until the cornflakes are completely coated.
- Spoon the chocolate coated cornflakes on top of the chocolate ganache layer.
- Melt 100g dark chocolate and drizzle in top.
