  • 170g plain (all-purpose) flour
  • 20g cocoa powder
  • 230g caster sugar
  • 60g soft light brown sugar
  • 3 medium eggs
  • 1 tbsp vanilla extract
  • 1/4 tsp salt

Chocolate ganache layer

  • 130g milk chocolate
  • 130g dark chocolate (50%-60% cocoa)
  • 300ml double/heavy cream

Chocolate cornflakes layer

  • 120g cornflakes
  • 250g milk chocolate

Instructions

Brownie layer

  1. Melt butter and dark chocolate in microwave in 20-second bursts, stirring between, until smooth. Set aside to cool slightly.
  2. Beat eggs, caster sugar, light brown sugar, and vanilla extract for 3 minutes until creamy.
  3. Fold in melted chocolate and butter mixture.
  4. Sift half the flour, cocoa powder, and salt into the wet ingredients and fold in gently. Repeat with remaining dry ingredients until just combined.
  5. Pour into a lined 8"x8" square tin.
  6. Bake for 25 minutes at 170c fan.

Chocolate ganache layer

  1. Once the brownies have cooled completely, make the chocolate ganache.
  2. Chop the dark chocolate into very small pieces and put into a bowl.
  3. Heat the cream on its own in the microwave for 1 minute. Once hot, pour over the chocolate.
  4. Let it sit for 1 min, then stir to combine.
  5. Let the ganache cool until it becomes a thicker spreadable consistency.
  6. Spread the ganache on top of the brownies.

Chocolate cornflakes layer

  1. Melt the chocolate, pour over the cornflakes. Mix together until the cornflakes are completely coated.
  2. Spoon the chocolate coated cornflakes on top of the chocolate ganache layer.
  3. Melt 100g dark chocolate and drizzle in top.
