I finally caved and made the Viral Mini Egg Crunch Cake, the Easter cake everyone has been raving about online. But let’s be honest — the original version can be a little polite with its chocolate flavour. So, I gave it a proper upgrade with real melted chocolate and butter, turning it into a rich, indulgent treat that actually punches you in the face with chocolatey goodness. Whether you’re baking for Easter or just treating yourself, this cake is guaranteed to impress!

Ingredients
Mini Egg Crunch Cake - 6"x 2.5" cake
- 1 medium egg
- 130g caster sugar
- 30g butter (melted)
- 30ml oil
- 95ml buttermilk
- ½ tsp vanilla
- 50g dark chocolate (melted)
- 70g plain flour
- 25g cocoa powder
- ½ tsp bicarb
- ½ tsp baking powder
- pinch salt
- 1 tsp instant coffee
- 85ml boiling water
Chocolate ganache
- 200g dark chocolate (50%-6-% cocoa)
- 150ml double cream
- 15g butter
- 3-4tbsp golden syrup/honey
Chocolate cornflake layer
- 150g milk chocolate
- 120g cornflakes
Instructions
Chocolate cake layer
- Whisk the egg and sugar together until creamy and light in colour.
- Add the Oil, melted butter, vanilla and buttermilk in a measuring jug, whisk togther.
- Add the sifted flour, cocoa, bicarbonate, baking powder & salt in a bowl.
- Pour the ingredients in the meauring jug into the bowl, mix together.
- Add the brewed coffe mixture, fold using a spatula until combined.
- Pour the cake mix into a 6" x 2.5" cake tin, make sure there is at least 1.5" of space between the cake batter and the top of the cake tin.
- Bake for 25 minutes ate 160c fan.
Chocolate ganache layer
- Make the chocolate ganache once the cake has cooled.
- Chop the chocolate into small pieces.
- Heat the cream in a measuring jug for 40 seconds until hot, pour over the chocolate.
- Let it sit for 1 minute, if the chocolate has not melted, heat in the microwave 10 seconds at a time.
- Add the butter and golden syrup/honey, stir gently to combine.
Chocolate cornflake layer
- Melt the milk chocolate int he microwave, coat the cornflakes in the chocolate.
Assemble
- Pour the ganache over the cake whilst it still runny, and not hot.
- Then add the chocolate cornflakes.
- Sprinkle whole and crushed mini egg on top.
