Snickers Brookies – Peanut caramel filling

How do I make these Snickers Brookies?

There are three parts that you need to make to bring this fudgy dessert mash up together-brownie batter, a peanut caramel sauce and cookie batter.

Cookie layer

  1. Cream the room temperature butter, white and brown sugar together.
  2. Add the egg and vanilla extract, mix until combined.
  3. Add the flour, baking powder, bicarbonate of soda and salt. Use a spatula to fold into the wet ingredients.
  4. Fold in the chocolate chips.
  5. Cover the bowl with cling film and chill in the fridge until ready to use.

Peanut caramel filling

  1. Melt the soft caramels on a low heat until melted.
  2. Add 1/4 cup double cream mix until combined then add the peanuts.
  3. Remove from the heat, but leave in the sauce pan.

Brownies

  1. Line a 20x20cm brownie tin with baking paper.
  2. Melt the dark chocolate and butter in the microwave, 20 secs at a time. Mix together, make sure the melted chocolate and butter are well combined. This stops the brownies batter from splitting. Set aside to cool for 5-10 mins.
  3. Mix the eggs, sugar & vanilla extract with an electric beater/stand mixer for 3 mins until creamy.
  4. Fold in the slightly cooled melted chocolate and butter mix with a spatula.
  5. Sift half the flour, cocoa and salt into the wet ingredients, fold in with a spatula. Repeat with the remaining dry ingredients.
  6. Fold in the dark chocolate chunks.

Ingredients

Brownies

  • 160g butter
  • 180g dark chocolate
  • 160g plain flour
  • 40g cocoa powder
  • 3 medium eggs
  • 200g caster sugar
  • 60g light brown sugar
  • 1tbsp vanilla extract
  • 1/2 tsp salt
  • 40g dark chocolate chunks

Peanut caramel filling

  • 240g soft caramels
  • 70g salted peanuts
  • 1/4 cup double/heavy cream

Cookie layer

  • 50g butter
  • 40g caster sugar
  • 35g soft light brown sugar
  • 1 small egg
  • 1tsp vanilla extract
  • 80g plain flour
  • 1/4 tsp baking powder
  • 1/4tsp bicarbonate of soda
  • 1/4tsp salt
  • 30g dark chocolate chips

Instructions

Cookie layer

  1. Cream the room temperature butter, white and brown sugar together.

  5. Cover the bowl with cling film and chill in the fridge until ready to use.

Assemble

  1. Make the cookie mixture then place in the fridge to chill.
  2. Make the peanut caramel filling, leave in the sauce pan until ready to use.
  3. Make the brownie mixture, add half into the lined brownie tin.
  4. Stir the peanut caramel sauce in the sauce pan. If it is too hard, heat on a low heat for 10 seconds. Do not let the caramel become too hot.
  5. Spoon the peanut caramel filling on top of the brownie layer.
  6. Add the remaining brownie batter on top, use a spatula to make sure it covers the caramel underneath.
  7. Remove the cookie batter from the fridge, scoop spoonfuls and flatten slightly in your hand then place on top of the brownie layer.
  8. Bake in the oven for 28-30minutes at 170c fan.
  9. Let the Snickers brookies completly cool before serving.
