Ferrero rocher coating

You have two options for melting the chocolate- Option One:

  1. Chop the chocolate into small pieces, melt in the microwave.
  2. Melt 20 seconds at a tine until melted.

Melting the chocolate this way means it will not be 'Tempered' so the chocolate may get little spots or white streaks as it starts to dry. If you are not too bothered about the appliance then go for this option. Option two:

  1. Temper the chocolate -Chop the chocolate into small pieces, melt in the microwave
  2. Microwave ⅔ of the chocolate at 50% power in a microwave-safe bowl.
  3. Start with 25 seconds, then stir.
  4. Continue in 15-second bursts, stirring between each, until mostly melted but with a few solid pieces.

Add the remaining ⅓ of the chocolate (this is your “seed”) and stir until it’s all melted and smooth. Optional: Use a thermometer to check if it's within tempering range: for Dark chocolate: 31–32°C (88–90°F) If it’s too warm, stir gently until it cools down. If it’s too cool and starting to thicken too fast, zap it for 5 seconds max and stir. Add the chopped nuts, stir to combine.

Assemble

  1. Dip the cannoli shells in the nutty melted chocolate.
  2. Pipe the Nutella cream cheese mix into each end of the cannoli shell.
  3. Drizzle a little slightly warmed Nutella on the cannoli, serve immediately.
  4. Best eaten on the same day as the tortilla shells will become soft.
