Ingredients

Pumpkin spice latte rolls

  • 2 1/2 cup plain flour
  • 1/4 cup caster sugar
  • 2 tbsp unsalted butter
  • 1 egg
  • 7g instant yeast
  • 1/4  cup  + 4tbsp water
  • 1/4 cup milk
  • 1/2 tsp salt

Filling

  • 1/4 cup butter
  • 1/2 cup light brown sugar
  • 4tbsp pumpkin spice

Pumpkin spice latte cream

  • 1.5 cups double/heavy cream
  • 1 shot of espresso
  • 1tbsp pumpkin spice
  • 1tbsp icing sugar

Caramel pumpkin spice latte icing

  • 3/4 cup icing sugar
  • 1/2tbsp salt
  • 2tbsp caramel (thick caramel or dulce de leche)
  • 1/4 cup double cream
  • 1tbsp coffee granules + 1tbsp hot water

 

Instructions

  1. Heat the caster sugar, butter, whole milk and water in the microwave until the butter is almost melted. Set aside to cool for 5 mins.
  2. Add the instant yeast,  plain flour and salt together in a separate bowl. Do not sprinkle the salt over the yeast.
  3. Once you can comfortabley put your finger into the melted butter mix, pour into the dry ingredients. Mix  together using a spoon until it starts to combine. Remove from the bowl and knead on a flour dusted counter for 5-7 mins or use a stand mixer.
  4. Lightly grease a bowl with vegetable oil, put the dough inside and cover with cling film. Let it rise for 1hour. Place the dough in a warm moist room, you want the dough double in size if possible)
  5. Roll the dough into a rectangle (24cmx16cm), spread the butter all over the dough, the brown sugar and the pumpkin spice.
  6. Cut the rectangle into 6 strips using a pizza cutter, roll up each strip and place on the baking dish. Cover with cling film for 30 mins to allow them to rise.
  7. Make the pumpkin spice latte cream: Add all the ingredients into a measuring jug and mix together. Pour over the cinnamon rolls then bake @170c for 15 mins.
  8. Make the caramel pumpkin spice latter icing: Melt the coffee granules with the hot water then add all the ingredients in a bowl, mix together using an electric beater.
  9. Pour the caramel pumpkin spice latter icing over the warm rolls. Enjoy on the same day whilst they are still warm.

Hi Emma. You have egg listed in the ingredients, but the recipe doesn’t say when/where to add it in. Just thought you should know.
