Ingredients

 

Bruschetta garlic bread

  • 1 loaf bread
  • 100g butter (room temperature)
  • 4 garlic cloves
  • 1tbsp chopped parsley
  •  250g Cherry tomatoes
  • 3tbsp balsamic vinegar
  • 4tbsp olive oil
  • Sprinkle of salt and black pepper
  • 2tbsp chopped basil leaves

Instructions

Bruschetta garlic bread

  1. Wash and chop the cherry tomatoes, add to a bowl.
  2. Drizzle the olive oil, balsamic vinegar, basil, salt and pepper mix to combine, set aside for at least 10 minutes.
  3. Cut the bread loaf in half, decide if you are going to use both pieces of bread or just one half.
  4. Spread the butter on the bread then bake in the oven for 8-10 minutes at 230c fan. (Make sure it does not burn)
  5. Once the garlic butter has melted and the bread is toasted add the cherry tomatoes on top and the  a few basil leaves.
  6. Sprinkle some salt and pepper on top and serve immediately.
