If you’re wondering what to do with leftover Pannetone, this chocolate panettone bread pudding is the ultimate cosy dessert. Made with soft cubes of panettone soaked in a rich chocolate custard, then baked until gooey in the centre and crisp on top, it’s an easy, indulgent way to turn Christmas leftovers into something delicious. This recipe is simple to make, chocolatey, and perfect served warm with cream or ice cream -the kind of dessert that feels fancy with very little effort.

Ingredients
Chocolate custard
- 2 medium eggs
- 100g milk chocolate
- 100g caster sugar
- 200ml double cream
- 200ml whole milk
- 1 tsp vanilla extract
Other items needed
- Panettone, cubed (enough to fill an 8-inch cast iron skillet)
- Extra chopped chocolate, for sprinkling on top
- Chocolate chips to sprinkle on top
Instructions
- Preheat the oven to 160°C fan.
- Slice the panettone into cubes and pack them into an 8-inch cast iron skillet.
- Gently heat the milk and cream in a saucepan until steaming (not boiling).
- Add the milk chocolate and stir until fully melted and smooth. Remove from the heat.
- Whisk the sugar and eggs in a separate bowl, then slowly pour the warm chocolate mixture over them, whisking constantly.
- Stir in the vanilla extract.
- Pour the chocolate custard evenly over the panettone, making sure all the cubes are soaked.
- Sprinkle chopped chocolate generously over the top.
- Bake for 30 minutes, until just set with a soft, gooey centre.
- Serve warm with cream, ice cream or extra custard.
