 Kladdkaka is an easy sticky Swedish chocolate cake. This recipe has only 5 ingredients! It has a gooey center, similar to a brownie or a molten chocolate cake.

You don’t need any fancy equipment or skills, just a bowl, a whisk and an oven. Kladdkaka is perfect for any occasion, whether it’s a cozy afternoon snack, a birthday celebration, romantic date night or Valentine’s day. It goes well with whipped cream, ice cream or fresh berries. And the best part is, you can eat it warm or cold, depending on your mood. I love to eat mine warm with a dollop of whipped cream!

What does Kladdkaka mean?

Kladdkaka means “sticky cake” or “messy cake” in Swedish, so you would not say Kladdkaka cake (because you would be saying cake twice). Kladd means sticky and kaka means cake! The trick to making a perfect kladdkaka is to bake it just enough so that the center is still soft and sticky, but not runny. You don’t want to overbake it or it will lose its moistness and become dry. The baking time depends on your oven and the size of your cake pan.

Kladdkaka is so popular in Sweden that there is even a national day dedicated to it: November 7th. It is also one of the most common desserts served at fika, the Swedish coffee break tradition.

Tips for making Kladdkaka?

  • Don’t overmix the batter. You want to stir just enough to combine the ingredients, but not more. Overmixing can introduce air bubbles that will make your kladdkaka rise too much and lose its gooeyness.
  • Don’t overbake the cake. This is the most important tip of all. The key to a perfect kladdkaka is to take it out of the oven when it’s still slightly underdone in the center. The cake will continue to cook as it cools down, so don’t worry if it looks wobbly or wet. Trust me, it will set and become fudgy and irresistible.

How to make this easy sticky chocolate cake -Kladdkaka?

  • Melt the butter in the microwave, 10 seconds at a time.
  • Add the sugar, whisk together until combined.
  • Add the sifted flour and cocoa powder. Stir together until combined.
  • Add the eggs, mix together until smooth.
  • Line the bottom of a 7″ spring form cake tin, pour the cake into the tin.
  • Bake the cake in the oven at 170c fan for 40-50 mins.
  • Serve with dusted icing sugar.
