Strawberry Cheesecake Tacos

Valentine’s Day is approaching, so I’m sharing one of my favourite easy desserts -Strawberry cheesecake tacos! This recipe is super easy and customisable because you can make the taco shells what ever size you like. All you need is some tortilla wraps…now hear me out before you start questioning If I am ok… You cut small circles out of the tortilla wraps using a cookie cuter, fold them in half, pop them in the gaps of an upside down cupcake tin, and bake them in the oven until they become crispy.

They are very cute and perfect for Valentine’s day, Galentine’s Day, date night or any time you need a to make an easy and fun dessert.

When should I make these strawberry cheesecake tacos?

You can make them whenever you like! But here’s some suggestions below:

  • Valentine’s Day to share with your love one.
  • Galentine’s day to share with you besties, they are super cute and would be great to make for your girlfriends.
  • Date night, you don’t have to wait for a special occasion like Valentine’s Day.
  • When you need a dessert pronto! They are very quick to whip up.

Tips for making the perfect strawberry cheesecake tacos?

These dessert tacos are very easy to make, but here are some tips below:

  • To make it an even faster process, you can make the taco shells the day before and store them in an airtight container.
  • Do not over whip the cheesecake filling, once it is firm enough to pipe and hold it’s shape stop whipping!
  • Make sure you blitz the Biscoff biscuits in a food processor to make them extra fine. If you choose to bash them in a zip lock bag, they can be a bit chunky and they do not look as nice on the taco shells.
  • The strawberry topping is super easy to make using strawberry jam. Chop the strawberries into small cubes, then mix with some strawberry jam. There you have it, strawberry sauce without having to cook anything and it tastes delicious!

How do I turn tortilla wraps into mini taco shells?

It’s so easy, all you need is tortilla wraps and a cookie cutter:

  • Use a food processor to blitz the Biscoff biscuits into fine crumbs. Set aside.
  • Cut six 3″ diameter circles using a cookie cutter. You will need two tortilla wraps. (This recipe makes 6 tacos.)
  • Brush one side of each tortilla circle with melted butter, then coat in Biscoff crumbs. Make sure to coat the edges as well.
  • Fold the tortillas in half then place in between the gaps of an upside down cupcake tin.
  • Bake for 7-8 mins at 160c. Do not burn them.
  • Leave the taco shells in the cupcake tin to cool.

Ingredients

Mini taco shells

  • Tortilla wraps (soft wheat tortilla wraps)
  • 7 Biscoff biscuits
  • 2tbsp melted butter

Cheesecake filling

  • 165g cream cheese (full fat)
  • 1/2 cup or 120ml double cream
  • 4tbsp icing sugar
  • 1tbsp vanilla extract

Strawberry topping

  • 6 strawberries
  • 3-4tbsp strawberry jam

 

Instructions

  1. Use a food processor to blitz the Biscoff biscuits into fine crumbs. Set aside.

  4. Fold the tortillas in half then place in between the gaps of an upside down cupcake tin.

  6. Leave the taco shells in the cupcake tin to cool.

Cheesecake filling

  1. Add the cream cheese, icing sugar and vanilla extract in a mixing bowl. Mix together using an electric beater until combined.
  2. Add the cream, mix until firm, make sure not to over mix. The consistency should be firm enough to pipe and hold its shape in the taco shell.
  3. Add the cheesecake filling in a piping bag. Place in the fridge until ready to assemble the tacos.

Strawberry topping

  1. Wash 6 strawberries, dry and chop into small cubes.
  2. Add 3-4 tbsp of strawberry jam in a bowl. Mix using a spoon to make it smooth.
  3. Mix in the strawberries.

Assemble

  1. Cut the tip off the piping bag, pipe the cheesecake filling into the taco shells.
  2. Top with 1tbsp of the strawberry mix.
  3. Optional- serve with a drizzle of melted chocolate.
