Ingredients
S'mores Kit Kat Cookies
- 150g unsalted butter, softened
- 60g soft light brown sugar
- 100g granulated sugar
- 1 egg + 1 egg yolk
- 1 tsp vanilla extract
- 190g all purpose flour
- 1/4 tsp salt
- 1/4tsp baking powder
- 100g semi sweet chocolate chips
- 100g choc chunks
- 8 Marshmallows
- 8 (2 piece Kit Kats)
- 8 Lindt squares
Instructions
S'mores Kit Kat Cookies
- Cream the room temperature butter together with the sugars and vanilla extract.
- Once creamy and combined, add the egg and egg yolk. Mix util combined.
- Add the sifted flour, baking powder and salt.
- Fold into the wet ingredients with a spatula.
- Pour in the chocolate chips and chunks. Fold into the mixture until combined.
- Cover the bowl with cling film and refrigerate for 1 hour or overnight.
- Place Kit Kat bars on a lined baking tray, then top with a marshmallow, then a piece of Lindt chocolate.
- Weigh 90g balls of cookie dough, then flatten over each marshmallow.
- Bake in a pre heated oven for 12 minutes at 170c fan.
