Ingredients

Terry's Chocolate Orange Brownie Cake

  • Butter 180g
  • Dark chocolate 70% cocoa 150g
  • Terry’s Chocolate Orange (whole, 145g) 1 (melted)
  • Plain flour 220g
  • Cocoa powder 25g
  • Salt ¼ tsp
  • Eggs 3 medium
  • Caster sugar 230g
  • Soft light brown sugar 80g
  • Vanilla extract 1 tbsp

Chocolate ganche drip

  • 100g milk chocolate
  • 70g dark chocolate
  • 200ml double/heavy cream

Instructions

Terry's Chocolate Orange Brownie Cake

  1. Preheat oven to 170°C fan.
  2. Grease and line an 8" round tin, 2"+ deep with parchment.
  3. Chop 70% dark chocolate and Terry’s Chocolate Orange.
  4. In a heatproof bowl, melt butter, dark chocolate, and Terry’s together in 20–30 sec bursts (or over a bain-marie) until smooth. Mix together until completely combined.
  5. In a large bowl, whisk together eggs, caster sugar, brown sugar, and vanilla for 3 minutes.
  6. Pour the melted chocolate/butter mixture into the egg/sugar mixture. Stir gently until fully combined using a spatula.
  7. Sift together flour, cocoa powder, and salt.
  8. Fold gently into the wet mixture until smooth.
  9. Pour batter into the prepared tin.
  10. Bake 40 mins at 170°C fan, until a toothpick inserted in the centre comes out with moist crumbs.
  11. Cool completely in the tin to set the fudgy texture.

Chocolate Ganache

  1. Chop the milk and dark chocolate into very small pieces and put into a bowl.
  2. Heat the cream on its own in the microwave for 40 seconds. Once hot, pour over the chocolate. (not too hot)
  3. Let it sit for 1 min, then stir to combine. (if the chocolate does not completely melt, heat in the microwave 10 seconds at a time)

Assemble

  1. Ponce the brownie cake has completely cooled pour the chocolate ganache on top of the brownie cake, push it over the sides so it drips down.
  2. Place the Terry's chocolate orange segments on top around the side of the cake.

Serving

  1. I love to cut a slide and warm it in the microwave 8-10 seconds, and serve with a dollop of whipped cream!
