Easy Chocolate Tiramisu Cookies

I’m sure most of you have heard of Tiramisu cookies, but have you seen chocolate Tiramisu cookies before? I took this popular cookie and gave it a chocolate make over. The chocolate cookie is rich, fudgy and flavoured with a little coffee liquor. Feel free to leave this out if you are not a coffee or alcohol fan, they still taste great. I’ve made these cookies without the coffee liqueur and they were still amazing.

So what exactly makes them Tiramisu cookies? Well the Mascarpone and cocoa are key components in Tiramisu which I put on top of these chocolate cookies. All the flavours taste so good together it’s like a chocolate cookie tiramisu party going on in your mouth.

Why should I make these cookies?

if you are still not convinced that you need to make these delicious cookies, I’ve listed a few reasons below-

  1. If you love chocolate cookies but would like to try something different.
  2. You love Tiramisu and cookies, then this one is definitely for you
  3. You want to make a dessert that people can eat at a party. They are easy to walk around and eat at the same time. If you do want to serve them at a party please notes the cocoa powder seeps into the mascarpone (because its wet) so only dust just before serving!

How do I make these cookies?

  • Melt the butter in the microwave 20 seconds at a time.
  • Add the sugars, mix together with electric beaters for 1 minute.
  • Add the egg, vanilla extract and coffee liqueur. mix until combined.
  • Sift the dry ingredients into a separate bowl.
  • Fold half the dry ingredients into the wet ingredients, then repeat with the remaining dry ingredient
  • Fold in the chopped chocolate.
  • Chill the cookie dough in the fridge for 40 mins – 1 hour.
  • With 70g dough bowls, top each ball with some chopped chunks of chocolate.
  • Bake 6 cookies at a time for 12 mins at 175c.

Ingredients

Chocolate cookies

  • 170g unsalted butter
  • 180g granulated sugar
  • 60g soft light brown sugar
  • 1 egg
  • 1/2tsp baking soda
  • 185g plain flour
  • 40g cocoa powder
  • 1/4tsp salt
  • 100g chopped dark chocolate
  • 1tbsp coffee liqueur
  • 1tbsp vanilla extract

Makes 10-11 cookies

Mascarpone topping

  • 250g mascarpone
  • 50g icing sugar
  • 1tsp vanilla extract
  • cocoa powder for dusting

Instructions

Mascarpone topping

  1. Mix together mascarpone, vanilla extract and sifted icing sugar.
  2. Add into a piping bag, pipe swirls on top of each cooled cookie.
  3. Dust with a little cocoa powder. Please note that the cocoa seeps into the mascarpone (because it's wet), so only dust them right before serving!
